It's actually better to postpone your weight loss attempt until you're ready to do it RIGHT! * Give these following recipes a try and see how simple and pleasurable itis to create a more healthy lifestyle. RATATOUILLE (makes about 2 1/2 quarts This is a well seasoned vegetable "stew" "of og a, zucchini, onions, peppersiand tomatoes and is a versatile dish that should be a part of every cook's repertoire. In addition to this use as a side dish; it can be used as a hot topping for skinless chicken breasts, fish fillets, pita or as a filling for crepes, or as a cold dip or an appetizer. Ratatouille freezes well and can be store in freezer containers of your choice for latersuse. The salt sprinkled on the eggplant is needed to extract the bitter juices, but do rinse the eggplant after it has been drained to keep salt to the minimum. For a Middle East version, substitute 1 tsp. cumin, turmeric, and 1/2 tsp. coriander for thyme, oregano and basil. 1 1p pounds Eggplant (2 small) unpeeled ~~ * al t 1/4 cup Olive Oil, divided 2 large Onions, thickly sliced 1 large Green Pepper, seeded and cut into 2" strips Add" thick 1 large Sweet Red Pepper, seeded and cut the as above 1 thsp. finely minced Garlic (3 large cloves) 2 1/2 Ibs. Ripe Tomatoes, peeled, seeded and coarsely chopped 11/2 Ibs. Zucchini, seeded, halved lengthwise and cut cross-wise info 1/2" slices. 1/2 tsp. each Thyme and Oregano 2 tsp. minced fresh Basil or 1/2 tsp. Dricd Basil 1/2 tsp. Pepper 1/8 tsp. No one would quesfion the enormous task performed by Kent, yet I'm certain she would be the first to say that the pleasure she has recejved far outweighs her contribution. The words 'ball of fire' are not overly descriptive of Kent and her lifestyle. The first encounter was quickly followed by an evening of art, talk, tea and cake at the home of mutual friends. We spoke of many things, art at the library being one topic. After that evening, I've been-asking myself two questions. "How does she do it?", and, "What will we do when she's no longer doing it?" The 'it' I'm referring to is the wonderful service she has performed at Scugog Memorial Library. July 1992 will mark the 10th anniversary of Kent bringing art to our community through the displays at the library. It will also, sadly, be when Kent retires from this volurftary position. How bare those gallery walls will seem . this summer. v much to gain -- have fingers in many other pies, she worl' be sitting at home twiddling her thumbs. Look into that mirror one last time. RATATOUILLE PITA PIZZA These pita pizzas make good use of any leftover frozen ratatouille that may be available. The pizzas can be set up in advance on a cookie sheet and baked as an appetizer at party. time. ¥ 4 ounces Tomato Sauce 6-8" size Whole-wheat Pitas 3 cups of the Ratatouille Recipe (above) 3 ounces Part-skim Mozzarella Cheese, 3 tbsp. Grated Parmesan or Romano Spread gbout 1 tbsp. of tomato sauce on top of each pita. Spread 1/2 cup. ol uille on top of each pita. Sprinkle the mozzarella a Parmesan over the ratatouille. Bake the pita pizzas in a preheated 4 degree oven for about 10 minutes or until filling 1s hot and the cheese is fully melted. To serve, cut each pita into 4 wedges. (Makes 24 wedges.) In a medium bowl, combine the flours; baking powder and soda, cinnamon and nd amet Add this to the applesauce mixture, stirring just to moisten the dry ingredients. Stir in the raisins, and divide the batter among 12 or paper lined muffin cups. Bake the muffins in a preheated 375 degree oven for 1810.20 minus. This week ended with a baking session. After having a great long wegk- end, we got back intp our busy programs on Tuesday the T5th: A handful of residents attended our own Bible Care College. The very "next day we held our monthly res- idents council meeting. Major items that were discussed were ideas for Christmas trips and plans for the Christmas party. Thursday afternoon everyone was extremely busy working on crafts to be sold at our Christmas bazaar. Later on in the evening, there was the ever- popular pub night. It was lots of fun to play the 'Nursing Home Downs' horse racing. Friday Oct. 18 ended angther week.
