Tourtior Joyeux Noel One of my newest Christmas traditions was introduced to me by the greatest boss in the world (or this part of it anyways) - Guy. It's an old family tradition (his family) from the Ottawa area. Every Christmas I phone Donna for the recipe because T've misplaced the recipe from the previous year, Surprise Donna! I found them all! This recipe is per pie and can be multiplied by the number of pies required. I cheat some times by using the wonderful crust from Mother Jackson's, but you could make your own favourite pie crust. Donna (and I) use part pork and beef - Guy's sister also uses part ground veal. Tourtier Mix in a heavy pot: 11b. ground pork 1 small onion, diced EA] 1 garlic clove, ground V2 tsp. salt 1/2 tsp. savoury 1/4 tsp. celery salt 1/4 tsp. ground cloves 1/2 cup water Bring to a boil, simmer approximately 20 minutes. Skim off any fat before adding: V4 cup to 1/2 cup fresh bread crumbs. Let stand 10 minutes or so, making sure that the bread crumbs have absorbed the liquid. The mixture should be moist but not wet. Place in unbaked pie shell, cover with pastry top with (steam vents). Bake at 400°F for 10 minutes. Reduce heat to 350°F and continue baking until golden brown. Season's everyone.
