Since it is almost always cooked with sugar or with a sweetener, it is used as a fruit. The leaves are dtighly toxic and should be removed and discarded right away. Rhubarb also was originally cultivated for its roots which have medicinal properties. It freezes well when chopped or stewed. Many are aware of its laxative properties, and it is also a source of potassium, calcium and some iron. A cup of diced raw rhubarb contains only 20 calories but this advantage will be significantly changed when sugar is used to sweeten it (add about 16 calories per tsp.). Better yet, try "Splenda" artificial sweetener, which does not illicit ani aftertaste. It was probably enjoyed at a certain function or party where most of us only show our best - at least from the kitchen. Many times recipes will be passed down and around and should it return to the originator, it wouldn't be recognized. Most of us will make some minor change or substitution, usually not even changing the written recipe. For months now, I've been hearing raves from my dear spouse about the excellent coleslaw he often enjoys at noon hour. It sounded a lot like what I chll Maude's coleslaw (I was given the recipe by a very fine and fun loving lady at my first "real" job at the Cottage Hospital kitchen in Uxbridge). Bill brought it home last week after. warning Mrs. Edwards at Port Perry High that she just might see it in print. Bill seldom raves (about coleslaw that is), so I thought I should share this great recipe with you. It will keep in the frig for a long time and goes well with burgers-or casseroles. Thanks Mrs. Edwards (I've heard a lot about a Mexican style soup tool). Pickled Coleslaw 1 large cabbage (shredded) 2 large onions (thinly sliced) 1/4 c. sugar 1 tsp. salt Place in Bowl. Sauce - 1 c. white vinegar 2 tsp. prepared mustard 1/4 c. sugar 3 tsp. celery seed Bring to a boil. Remove from stove'and add 3/4 c. salad oil. Pour over cabbage, stir and chill. With pastry blender or 2 knives, cut in until mixture is crumbly. Combine egg and milk and stir this into flour mixture. Spoon the batter as evenly as possible over the fruit mixture (batter will be hard to spread, so don't try or worry). Sprinkle the top of the crisp with the remaining sugar or r b, 2 thsp. sugar, cinnamon and nutmeg. Bake for 30 minutes at 375°.
