Contrary to popular opinion, a natural ingredient, known as oxalic acid can bind some of the calcium and iron in these greens making the nutrienfs unavailable for absorption in your body. Unlike most vegetables, in which starch is the primary carbohydrate beets contain most of their carbohydrate as sugar. To prevent nutrient loss from the roots, beet tops should be removed right after picking or purchase, but leave a couple inches of stem to prevent nutrgent loss and "bled#ding" of color when cooking the roots. The tops, which keep, refrigerated, only a day or two, can be boiled, steamed or microwaved and are a fair source of vitamin A and, interestingly enough, sodium. Conversely, beet roots can be kept up to about two weeks in the refrigerator. Depending on size, usually they require between 45 to 60 minutes to cook until fork tender. A pressure cooker may be used to save time. After they have been cooked, the skins will slip off quite easily. Beets can be enjoyed hot or cold, whole, sliced or diced or pickled. They are rich in potassium and also are noted for their laxative value. One cup of cooked beets supplies approximately 54 calories. "Beet Red" Salad 2 pounds fresh beets, untrimmed 1/2 large red onion, sliced 3 tbsp. red wine vinegar 2 tbsp. vegetable oil 2 tbsp. light soy sauce 1 tsp. ginger pepper to taste Trim leaves off bees. leaving an inch or two top.
