Remember when butter was a good thing to have on the table or be used in the kitchen for baking or even frying(!)? Recall what a treat chocolate was? Sugar was something only diabetes didn't use. How times have changed. In the "old" days we enjoyed the food that we could afford - and as with most things in life perceived that more was better. We've learned a lot about nutrition and food values in the past 30 years that I've been preparing meals and stocking the larder. One only has to read an old cookbook to appreciate the changes that have taken place But like almost everything else - "everything old is new again" Often what was considered a good, cheap recipe is also low in fat, sugar and cholesterol - ideal for today's standards This week's recipe is from that old favourite of mine - Mary Lisko's "The Happy Cooker". It can probably be made in the microwave oven but I prefer my old reliable heavy saucepan! Chocolate Pudding (or Pie Filling) Mix in heavy saucepan (or bowl) 4 thep cocoa 3 thep cornstarch 2/3 cups white sugar (or less) pinch of salt Wisk in 1/2 cup milk. When smooth add 1 ¥/4 cup milk. Cook over medium heat, stirring often until mixture comes to a boil Reduce heat, cook another two minutes or so until mixture is smooth and thickened. Remove frm heat and add 1 tsp vanilla and 1 thep margarine. Pour into dishes and cool.
