I awoke this morning with a tension headache brought on (I think) bya night of mental activity and planning. I laid there wide awake remembering the + Christmas patterns of my youth. I think I was manic about Christmas even then. The thrill of going with the family to Oshawa Center to shop in the big stores - Kresge's and Coles! The big thing about Christmas in those days the grand shuffle. Our maternal Grandmother, Grandma M. and Uncle Bob, Ker bachelor brother would leave their Whitevale home for a few days and stay at our place over the holidays. Sister Karen and I would move out of our rooms and shuffle over to Grandma and Grandpa Geers house across the lane. 1 don't recall this upsetting us »- I remember thinking that it was a special treat. Grandma's House was a small bungalow and at Christmas it must have been filled to near bursting as their whole family would gather together throughout the day to share the event. Grandma loved Christmas and all the traditions that our family had created. I hope that ' all of you have as many happy memories about this time of year as I do. If not, then let's start making some great memories for our kids. Joy to all and remember - relax! In a few days it'll all be over! This week's recipe is on my Christmas - hopefully to help avoid the last minute panic of how to cook seven things on a four burner stove. The recipe is from "Cooking with St. John's 1984", St. John's Presbyterian Church, Port Perry. I know it's good - it's the dirtiest page in the book - and can be made a few days ahead. Turnip Casserole Peel and cut up one large (or two or three small) turnips. Cook in salted water until tender. Drain and mash. Add: 1 cup applesauce or two small apples (peeled and diced), 6 tbsp. butter or margarine, 4 tsp sugar (I use brown), salt to taste, 1/4 tsp. pepper, 2 beaten eggs and 1 cup soft bread crumbs. Mix _means more snacking than usual it doesn't have to be laden with: high in fat foods. Many lighter versions of food products are available 'to us in the marketplace and lighter recipes can be blended into mepu planning quite well. Cheese and crackers can be chosen more carefully for holiday snacking. Some better choices in crackers include melba toast, crisp breads and whole-grain varieties. Many commercially made crackers are quite high in fat content. And of course, low- fat cheeses are now in abundance. When shopping for cheeses, look for those with the lowest butter fat (B.F.) or milk fat (m.f) content. Cheese that is low in fat will have 15 percent or less, about 4.5 grams fat per ounce ~ (25 gm.) Skim milk cheese hgs about 7 percent butterfat or lg¢ss or about 2.1 gm. of fat per ounce. By comparison, regular cheddar cheese has 32 percent butter fat or about 9.6 gms. of fat per ounce. Si bord S 1 well.Place in gr d Toss 8/4 cup soft bread crumbs with 2 tbsp. melted butter and sprinkle over turnip mixture, Can be baked at this stage at 350 degrees for 30 minutes or cool before storing covered in refrigerator. Remove from frig one hour or . more before serving time. Bake at 360 degree for 30 minutes more or less until heated through. This is great on melba toast or stuffed in mushrooms, or cherry Spread \ tomatoes. 1 cup ricotta cheese 1/3 ¢. smoked salmon, chopped 2 thep. chopped dill 2 tsp. lemon juice 3 tap. ketchup 1 tsp. horseradish Pepper to taste In a food processor or blender, puree ricotta until smooth. Add remaining ingredients using . on/off motion, process until lightly Makes 1 1/3 cups: 22 calories per thep.; 1 gram fat. Easy Sassy Salsa This version of salsa can be better in the winter, when matoes are a better choice than fresh. 1 can (19 oz. y Gmatons 2 tap. cider vinegar 1 1/2 tsp chili powder 4 green onions, chopped 1 clove garlic, minced 1/2 green pepper, chopped 2 drops of hot pepper sauce In a food processor or by hand, chop tomatoes.
