home cookin' lynda kendry WHO'S TURN IS IT? I sometimes wonder if the commercial advertisement creators are living in the same world as the rest of us. For example, the current commercial showing the family eagerly awaiting their dinner - enter dad with a portable phone on a covered platter - fried chicken to be delivered. WOW! The first few times that I watched the ad I marvelled at the remote possibility of it all and then I started to be offended. Most of the modern husbands and dads that I know certainly know their way around the kitchen. Most of the men in our family take pride in their cooking abilities and don't depend on take-out on "their night" to cook. Of course, it all started many years ago when we were all encouraged to experiment as youngsters. Spring Break is an ideal opportunity to let your young "adults in training" mess up your kitchen - the hardest part is teaching them to clean up! One of the first things we attempted to cook was The Popeye Egg (sometimes called egg in a nest or hole among other names). Take a slice of bread - cut hole in center by pressing a juice glass into bread. Place bread in hot frying pan with a small amount of butter (or vegetable spray). Blend egg into hole. Fry the circle as well. Season with salt and pepper if you like. Flip over and cook until egg is the way you like it. With the addition of microwave ovens to most kitchens, rice krispie squares are no trouble at all. If you smear a small amount of butter or margarine on your hands before putting the mixture into pan. Here's the recipe if you need it: In large bowl place 1/4 cup butter or margarine and five cups miniature marshmallows (small bag). Place in microwave and zap for three to five minutes depending on the size of your oven. Add dash of vanilla. Stir well and add six cups rice krispies. Mix quickly and pat into greased tray or pan. I don't know how they store - they're usually gone before we have to worry about it! And what could be quicker than ordering pizza? Probably putting your own together - and everybody can build their share to their personal taste. Anyone who can work the toaster and microwave can master grilled cheese sandwiches. Toast two slices of bread - add cheese slice to middle, wrap in paper towel and microwave 15-30 seconds until cheese is melted. And remember - one week from now they'll be back in school again. A cookie without margarine or butter. This was a challenge that I just had to pursue. And the sure test came when my family ate every last one of them. The secret is not to tell them that they are good for them as well. This cookie recipe is so easy to prepare that the kids can enjoy baking them this March break week. Commercial cookies are not generally as nutritious and are usually laden with highly saturated fats such as coconut or palm oil (to prolong shelf life) and far too much sugar. So give these high fibre, low in fat cookies a try! Great for 'weight watchers' too. GOOD FOR YOU COOKIES (less than 45 calories each!) 1 cup 100% bran cereal (ie. All Bran) 1/2 cup all-purpose flour 1/2 cup quick-cooking oats 1/3 cup packed brown sugar 1/8 cup unsweetened applesauce 1 egg, slightly beaten 1/2 tsp. baking soda 1/2 tsp. cinnamon 1/2 tsp. vanilla extract 1/4 cup raisins In a large bowl, combine all the ingredients, mixing until well blended. Preheat oven to 375 degrees F. Drop rounded teaspoonfuls of the dough approximately two inches apart onto a lightly greased cookie sheet. Bake the cookies for about ten minutes or until golden.
