The garden party includes a tea arranged by the ladies of the Scugog Island Head U.CW. And we take great pleasure in preparing nutritious and tasty desserts for our families. Right? What better way to show them that you care than by getting back in touch with the seasonal rhythms? A fresh feed of strawberries is just what we need to start off the summer. There are plenty of "Pick Your Own" locations to choose from especially in our area. (You can also purchase already-picked berries in most locations too.) You may want to call ahead to get an idea of when the berries will be the most plentiful. Early in the day or late afternoon are generally good times to go picking, as-thé berries will be firmer and the weather usually cooler. Enjoy the season and have a safe holiday Weekend! FRESH STRAWBERRY _ TARTS If you love strawberry pie, you'll enjoy these pastry treats! CRUST: , 1 cup unbleached flour 3 tbep. butter or margarine 3 to 4 tbep. cold water Cut margarine into flour in a medium bowl. Add only enough water to hold dough together. Roll out onto a floured piece of wax paper. Cut into 8 circles to fit into eight 3" tart shells. Prick dough with fork a few times. Bake at 375F for about 10 minutes until pastry is lightly browned. Cool FILLING: 1 cup low fat ricgtta cheese I tbsp. honey 1 tbsp. lemon juice 1/2 tsp. vanilla Strawberries or any other berries in season "Lite" Apricot jam (or peach) Combine all ingredients, except fruit and jam and mixed well. Fill tart shells. Arrange fresh fruit on top. Heat jam and pour over fruit as a glaze. (Jam can be strained). Makes 8 servings: Approx. 125 cal. each; 6 g. fat. The Grand Masquerade Gala is a"eglebration for the completion of the hospital expansion, a grand opening for the community, a history book on the hospital, as well as this being the 25th anniversary for the hospital on Paxton Street. I must admit that I'm not the most adventurous barbecuer around. I can usually manage the odd hotdog and other boneless meats but my past experiences with chicken pieces and porkchops have been flaming disasters. Not anymore though! I have finally conquered the art of barbecuing chicken pieces with the bones in them! The secret of course is foil wrap. Using my favourite recipe - lemon herbed chicken«- I cooked the nicest chicken without any flames or smoke in about 45 minutes and guess what - no pots and pans to clean. 1 also cooked Trout fillets in the same time -- I mastered them a long time ago! LEMON HERB CHICKEN Using a double layer of heavy- duty foil wrap place chicken pieces close together but not overlapping. Sprinkle with salt, pepper, savoury, basil and parsley (Those of you who are afraid of vampires can use garlic too) Squeeze lemon juice over chicken as freely as you like and close foil up to make a tightly closed but loose package. Place on hot grill and close the lid. of the barbeque. Relax with your favourite cold beverage for i ly 40 min. then open same manner last k llent as well.
