Your guests, more than likely, will be grateful for being spared the feeling of being overstuffed. If you are personally concerned about weight gain during this time and feel that sweets are too much of a temptation to have around the house, just have enough on hand for guests. You may want to trim your baking down to just accommodate those expected guests. If need be you can always run out to the bakeshop if you are running low. Days that you are not entertaining or eating out, return jto your normal eating pattern to compensate 'for any overindulgences you may have encountered. When purchasing a turkey, try to avoid pre-basted or"ones that have been injected with fat. You will not only be paying a higher price for this added feature but you will not be doing you or your family any favours, as the fat is of a hydrogenated or saturated nature When ready to thaw your bird, leave in original wrapper. Cover with cold water and allow 1 hour per pound or thaw in the refrigerator, allowing about 1 day for every 5 to 7 pounds. For stuffing figure on 3/4 to 1 cup for each pound of turkey. Add pieces to cover dish entirely. Cover bread with slices of ham. Lay slices of low fat cheese on top of ham and then cover with remaining slices of bread and make it like a sandwich. In a bowl beat eggs; add pepper, dry mustard, onion, green pepper, Worcestershire sauce & milk. Pour over the sandwiches; cover and let stand in refrigerator overnight. In morning melt 1 thep margarine; pour over top of egg mixture. Top with crushed corn flakes just to cover. Bake uncovered about 1 hour at 350F. Let stand 5-10 minutes before serving. Serve with fresh fruit salad! 8 servings: Approx. 350 cal. per serving; 8 g. fat. I was able to purchase some wonderful fresh salmon this past week from Don's Seafood, my fresh fish supplier at the Port Perry Country Market. I have a great dish I'm sure you'll want to attempt and enjoy. It requiresminimal effort and time. Take afilet of salmon and dust it with salt and white pepper, but be careful, you don't want to "over-season" the fish. Put olive oil into a large pan over a very high heat. Lightly flour the salmon then sear the fish on both sides quickly, as you want to preserve the moisture inside the fish. Place on an oven proof dish and bake at 400 degrees. This is not a lengthy process. Once you have completed the sauce, set it aside and then re-heat just before serving, Take the juice from half a lemon and add to one-third cup of white wine. Reduce the liquid down to about half. Then add about hhlf a cup of whipping cream. Reduce this down by about half again. Finally, add a tablespoon of butter and continue on high heat while stirring constantly. Now, it's time to set aside the sauce and start the preparation of the salmon itself. Remember to season the fish just before cooking and not &* I" allow it to sit. Once the fish is ed, re-heat that sauce, add 2 freshly chopped dill and e with the salmon. It makes a wonderful dish and you don't need to be a fish lover to enjoy it. PS.
