Zz Scugog Citizen -- Wednesday, January 4, 1995 -- 11 +4 healthstyles deb mcdonald Did you make any New Year's resolutions? It's quite admirable to set goals for yourself, yet the reason why so many of them fail to come to pass, is perhaps because your expectations are too unrealistic. Goals are more successfully met if they can be adapted and modified to your lifestyle, comfortably meeting your needs as well as accommodating your likes and dislikes. The most common resolution proclaimed especially every new year concerns weight Toss, of course. Making a verbal or conscious commitment requires some insightful preparation. A resolution, guided by active & honest thought, recognizing your limitatipns and lifestyle pattern, provides a more workable foundation. A thoughtful wish such as "I really would like to consume less 'junk' or 'empty' calorie foods & strive to make better food choices," is a more attainable or foreseeable quest than "I want to lose 50 pounds beforesthe summer." To be successful, a resolution is some change or modification which you truly believe you can make happen. Weighing out the advantages & disadvantages and making mental notes of plans and strategies to gradually transform these goals into reality, are critical in this step-by-step process. It takes conscious effort, time & a sound knowledge bé&¢e combined with an overall healthy approach to bring about longterm, positive results. Your motivation to bring about the, change(s) you desire must come within. Conforming to the critieisms, opinions or judgements of others is not the best way to satisfy your needs. In other words, be true to yourself! @® Waterproof ® Winterproof @ Lightweight @® Comfortable See these and many other quality footwear fashions at ... It hasn't stop) our arrival on New Years Day. 1 prepared Rack of lamb for my parents last night. It is a dish my mom thoroughly enjoys and has never prepared. It appears that many people are skeptical about lamb, and apprehensive to prepare it. Lamb is one of my favourite dishes. Rack of lamb is the one that I enjoy most. Rack of lamb is readily available. Usually what you will find in your local grocery store is New Zealand Lamb. If at all possible, and I can't direct you on this one, try to find fresh Washington State Rack of Lamb. This product will be a bit stronger in flavour, certainly more succulent and a larger loin. It will also be more expensive $15.59 a pound is what I paid. If possible purchase lamb that is already 'frenched' (meaning trimmed). Preheat your oven to 450 degrees. Take a large size frying' pan and place a few tablespoons of vegetable oil in the pan on high heat. What you are going to do is sear your meat. Sear all sides of the lamb, both ends, bone side and fat side. Place on a pan, or flat dish Tn the hot oven for approximately 15-20 minutes. While waiting for the lamb enjoy. a glass of your favourite chardonnay. After the 15-20 minutes remove your rack from the oven and let it sit for about ten minutes. This waiting period actually softens and tenderizes the meat. Turn rack bone side towards you. 1 Beginning on the right side of the rack place your sharpest knife at the left top of the rib. # Slide your knife down and through the meat. If you are doing this correctly you will have no resistance when getting down tothe bone. Your lamb will probably be medium rare at this point. Should you like your lamb less pink place it under your broiler until desired colour is acquired. A pointer with respect to desired doneness. Lamb is not like beef so don't automatically cook to the same colour. Lamb is best not rare but more pink. It seems to be far more tender. Try to stay away from mint sauce. That was a wonderful condiment when your grandmother made lamb and the mint was needed to disguise flavours. There are far more subtle flavours to compliment lamb. If you happen to be defrosting your frozen product and won't get to it tonight for dinner, marinade it in vegetable oil making sure that it is completely covered and it will be fine in the fridge for up to 5-7 days. If you are marinading you can also add flavours of your choice. I like garlic, rosemary, thyme, and if you would like, drop in some fresh mint.
