Pizza as a starter, brunch item, evening snack or a delectable dinner. Don't panic, the dough is simple. Buy it! Most grocery stores carry a ready made dough. If you would like to stick with this traditional type of dough, flour your counter top, bread board, or cutting board and your rolling pin. Then roll to your preferred thickness or shape. Alternative bases for the traditional dough are tortillas, a basic pie crust, pita bread or foccacia, (an Italian flat bread ° available ready made), 1.G.A. carries this. Begin building your pizza, you have more alternatives here also. Begin with a base of tomato sauce or extra virgin olive oil. For an oriental flare use some sesame seed oil. For vegetarians, yo may choose to use diced fresh tomato. For toppings, you can choose to be as elaborate as you like. We won't discuss the pineapple mushroom variety. Being married to a vegetarian, I will begin with vegetarian suggestions. Diced eggplant, fresh chopped garlic, roasted red pepper, fresh spinach, capers, leeks, shallots, artichokes, asparagus, grated carrot, hot peppers, belgian endive, sundried tomatoes, red cabbage, to name a few. Select your favorites and begin to build. For cheese, should you choose 'rings). to use it, one may sprinkle parmesan, feta, brie, or for the non dairy vegetarians, try goat cheese, or cheese flavored tofu (Goat Products & varieties of tofu are available at Herbally Yours on Mary St. in Port Perry). Goat cheese is a favorite of mine and I'm sure, soon to be a favorite of yours. For that oriental touch, use sprouts of any kind, water- chestnuts, fresh seafood, bok choy, tofu, sesame seeds, a few drops of teriyaki, some thin sliced beef, fresh garlic, diced pork, chopped green onion, are just a few ideas. "Gourmet Pizza" as referred to by many restaurants, may include combinations of the above mentioned and smoked salmon, smoked trout, smoked chicken (yes, smoked chicken should be pink) sardines, anchovy, scallops, lobster, crab meat, eel, or calamari (squid The variations and combinations are endless. Season your base of the pizza, be it the tomato, )r sauce. Use spices or flavored oils. For spices and herbs: oregano, basil, tarragon, chives, parsley, or crushed chili pepper. In flavored oils, there is chili, garlic, sesame and herb flavored. Toronto's Chinatown is a wonderful spot to find these. | can't begin to express how imperative it is to let your imagination go and experiment with the combinations of flavors and textures when cooking. The results can" be exhilarating, if you love to partake in food as much as I'do. The finishing touch can be the wine of your choice.
