Many local stores carry unusual combinations of flavours in pastas. 'White Feather Country Store (off Simcoe St. in Raglan) now carries a nice variety and so does Herbally Yours on Mary St. in Port Perry. Regd your package and cook accorflingly. Do not overcook. Pasta should be tender, yet not soft. If you are using fresh, only minutes are required. Depending on your meat base, you may choose (fresh is best) or dried dill, tarragon, basil, parsley, salt and/or pepper, curry, spinach, fresh tomatoes, or fresh romano cheese. This is also when you would add your smoked fish or chicken or any previously cooked meat that you have chosen. Toss the pasta that you have set aside in the sauce to heat through, then serve. Garnishing your pasta can add that extra touch when entertaining. Sprigs of herbs on the rim of your pasta bowl or plate. Fresh pepper and fresh grated cheese of choice. To stay away from the cream, you may saute your onion and garlic, and add the wine. A few fresh chopped tomatoes, your added flavours that you decide on and a little more olive oil. Toss your pasta in the mixture and heat throughout. Voila! Simple and I have been contemplating offering cooking courses. They would be about six weeks. I would only have 6 people per course. The entire course would be hands on. We would enjoy the hardships of our labour at the end and with the appropriate wine.
