Little wonder that television viewing has become associated with a variety of child and teen behaviours. It's influence is also evident in childhood obesity & dental health. The impact that watching T.V. contributes to obesity include the fact that very little energy, beyond the resting metabolic rate, is required for this activity & this low energy time could be constructively substituted with more rigorous activities. Physical inactivity may be the most important environmental factor contributing to obesity. Watching T.V. has also been shown to correlate with between-meal snacking on calorie-dense foods, most heavily advertised on children's programs. Approximately one-half of the commercials on T.V. promote food & beverages, most of which contain sugar. Some food company messages about high-sugar, low nutrient foods tend to take unfair advantage of an impressithable, nutritionally-naive audience. No regulations to prevent the promotion of less inferior food products are in force, however, parents & health professionals need to compensate for the slanted information provided by advertisements. Pick your window box, outdoor planter or appropriate spot to plant those herbs that you will use 80 often this summer. There is nothing more flavourful than fresh herbs in preparing your favourite culingry delights. Cooking with herbs is a wonderful way to add flavour to just about any dish. There is a distinct difference between using dried and fresh. If you are using a recipe that calls for dried, remember to dduble the quantity if you decide to use fresh. When growing your own or buying fresh, taste them. Again, it is a matter of taste preference. When preparing bruschetta, you may choose to use basil, thyme, oregano or parsley--a combination of them all or just one. Do you know that some herbs will change flavour when cooked? An example is terragon. Fresh, it tastes like black licorice. When cooked it loses this flavour and tastes completely different. Basil also loses the power of its flavour when cooked. If planting herbs this spring, keep in mind that there are varieties of herbs in the same family that will offer alternative tastes. Here are a few examples: mint, most common, peppermint, spearmint--then there is apple mint or pineapple mint. There are regular and garlic chives; flat or curly parsley, similar in flavour but different in appearance. There is a lemon variety of thyme and the different kinds of basil come in small leaf, large leaf, cajun and purple. Try them all and let your taste decide. Hove to have horseradish, dill, oregano, and garlic in my herb garden. Last year, I planted leeks and they came up absolutely scrumptious. I have read recently that when planting leeks, mound the earth up around the base of the plant. This will provide a much longer white of the leek. There are wonderful ediblg flowers from your garden that scan be used in summer salads or as a dessert garnish. A favourite of mine is the nasturtium. It comes in a variety of colours and are superb in salads where they offer colour and texture and a peppery flavour. They also make a nice border in an area of your garden where you need space to be filled up. Rose petals an be candied or eaten. You can do a lot with Johnny Jump Ups. Harrowsmith magazine puts out a book on this topic. Of course, before you go off munching and nibbling on anything that grows, a certain amount of research should be depe into fresh herbs and edible flowers. It is worthwhile and enjoyable. South Port Gardens (five miles south of Port Perry on Simcoe Street) always has a marvelous selection of fresh herbs and seeds, and this year will be offering "cut your own herbs." Janet informs me that her selection will be as extensive as is available. Why not make this the summer to discover herbs and edible flowers. They can compliment most dishes from fish to meat to salads to desserts and appetizers. And what a treat for the taste buds.
