A minimal geléction, in general can be found on many menus for nutritious low calorie or low-fat alternatives and most restaurants frown on an adult ordering a "child's plate" serving! If there is a "dieter's special plate" available, don't assum that it is necessarily the case. Ask questions! Not all restaurants fall into this type. In any restaurant your request for changes, within reason, should be accommodated. For example, instead of french fries, ask for a baked potato (with butter on the side, if any), or ask for double vegetable portions in place of the potato. In my opinion it is long overdue. I created a'salad yesterday that I was extremely pleased with. It was a pasta salad with a different flare. A great idea for a lighter lunch or to serve as a pide dish. Start with a multi colour pasta. I chose a penne, yet any shape will do. Boil your water, salted if you wish, Cook your pasta until al dente. The texture should be firm to the bite. When I say firm I mean edibly firm. You don't want the texture too soft, as this will result in a mushy salad. When you have attained the required doneness, strain. Run cold water through your pasta to stop the cooking process. When the 'pasta has cooled, strain immediately. Set aside in a bowl, large enough to mix your salad. Toss lightly in olive oil to prevent sticking. Sprinkle your desired number of chili pepper flakes into the bowl. I used roasted red pepper cut into - - strips, at add colour and texture. Yet you may want to use simply a diced combination of red, yellow and green pepper. I then added a fairly healthy amount of crab meat. Season with salt and white pepper. Then toss the entire mixture in sesame seed oil. Sprinkle toasted sesame seeds on top and voila. It is an oil based salad and if you wish, you may add a couple tablespoons of mayo. Remember also when seasoning salads, that it does take time to pick up the salt and pepper flavour. Let your mixture sit for a while before adding additional easoning. There is nothing worse pan a salty salad. Another fun ing that I enjoy, i is experimenting with salad dressings. \ It seems that it is more apropo in the warmer weather. Some basic ingredients to start with are vinegars, (balsamic, red wine, white wine, flavoured such as raspberry, or herbal) oils (extra virgin olive oil, walnut oil, sesame seed oil, or sunflower, to name a few); Fresh squeezed orange juice, lemon juice, or grapefruit juice, variéties of mustards, garlic, herbs, salt, pepper and sugar. One that | prepared last week, was a combination of olive oil, honey, dijon mustard, fresh squeezed orange juice and salt and pepper. Delicious, simply on a bed of greens. Experiment with your dressings. They are very simple to make and far more cost ¢fficient' to make, then Hy. I like to use a metal bowl and a whisk is ideal for thorough blending. One loses in cost & control, but gains in convenience & less calories, SPINACH-MUSHROOM PIE 10 oz. frozen chopped spinach 2 cups cooked rice 1/2 fup shredded part- skim mozzarella cheese 1/4 cup minced green onion 1/4 cup minced red pepper . 141/2 tsp. dried dill pio egg whites 1-1/2 cups 1% milk 2 tsp. Dijon mustard Pinch of pepper 1/4 tsp. hot pepper sauce 2/3 cup thinly sliced mushrooms 1 tbsp. grated Parmesan cheese Cook: spinach according to package directions. Transfer to strainer to cool. Press with back of a spoon & squeeze with your hands to remove as much liquid as possible. In a large bowl whisk together egg & whites, milk, mustard, pepper & hot pepper sauce. Coat a 10 inch pie plate with no- stick spray. Add the rice mixture in an even layer. At even intervals tuck mushrooms into rice in a decorative pattern. Pour egg mixture over rice; sprinkle with parmesan. Bake at 350F for 45 to 50 minutes or until set & top is golden. Cool for 10 minutes before cutting.
