healthstyles deb mcdonald Many of us are concerned about the fresh produce we eat & rightly so. How are they produced, treated, stored & shipped? Many consumers have switched to so-called 'organic' fruits & vegetables which are featured at many markety & health food stores. Some of our concerns are focused on the pesticides & fertilizers used in producing food, and the waxes, colourings & gases applied after the food is harvested. There are a few answers to 'these concerns. But beware, paying a premium price for organically-grown' produce is no guarantee that the food is actually free of pesticide residues than the same foods purchased in the regular market place. There is no evidence that foods fertilized with only organic fertilizer are any more nutritious than the same foods grown in the usual manner. The nutrient content of a food has much more to do with its genetic make up, the climate, when it was picked & how it was shipped & stored than with the type of fertilizer used or soil 6n which it was grown. It is true, however, that most fruits and vegetables are washed before being shipped to market & that small amounts of fumigants may be added to the wash water to help clean them or to protect thm against\decay. In a few foods colour additives or fixatives are used, such as in some Florida oranges, which when ripe are still greenish in colour. On some mushrooms, a: bisulfite solution is used to prevent darkening. The possible hazards of these treatments are not too well made known. But there is still an allergic risk & question about their relationship to cancer in the long term. The gases used to promote ripening of fruits that are picked green mimic the gases naturally produced 'by fruits to ripen themselves. The most common one is ethylene gas, used commercially to ripen honeydew melons, tomatoes and bananas. If you put unripe fruit in a bag along with an apple, the ethylene gas expelled by the apple would speed the ripening of the other fruit. There is no known hazard associated with these gases. However, fruits ripened after picking usually have lgss Vitamin C than those ripened on the vine or tree. Another health concern stems from a natural ingredient in some vegetables. This is oxalic acid, found in spinach, Swiss Chard, sorrel, parsley, beet greens & rhubarb. Oxalic acid can bind some of the calcium & iron in these vegetables making the nutrients unavailable for z. LIGHT STRAWBERRY MOUSSE CAKE Strawberry Mousse: 1 envelope unflavoured gelatin 1/4 cup orange juice 3 cups fresh strawberries 1/4 cup icing sugar or "Splenda" artificial sweetener 1/3 cup Cool Whip Lite 4 egg whites 1/8 cup granulated sugar or sweetener Cake: 1 small angel food cake In a small microwave-safe bowl, sprinkle gelatin over orange juice; let stand 5 minutes to soften. Microwave at medium power for 30 seconds, (or over low heat until gelatin is dissolved.) Meanwhile hull strawberries & place in a food processor or blender; add icing sugar or sweetener & process just until pureed. Transfer to mixing bowl & stir in gelatin mixture. Refrigerate until consistency of raw egg whites. In a large bowl, beat egg whites until soft peaks form; gradually add sugar, beating until stiff peaks form.
