The food business was always a vital amd enjoyable part 'of Mr. Jackson's life. In the fifties he and his wife, Marj, owned the Flamingo Restaurant in Bort Perry, In the mid sixties he sold the business and started Flamingo Pastries, operating out of the family's one car garage on Simcoe Street. Using his mother's recipe he produced those delicious Flamingo butter tarts that grew to be famously known across the country. He later sold the business to Vachon Inc. In 1974 he started Mother Jackson's Open Kitchens, a company that made and sold only meat pies. Starting with less than 20 employees working on one shift, the peak production period today employs over 150 people over two shifts, seven days a week. When the company began it averaged 30,000 pounds of meat pies a week. Now, under the Schneider label, the company, produces over an average of 280,000 pounds of various food products. David Jackson played on the team in 1972 and 1973 when the team was known as The Flamingos. Later when Flamingo Pastries was sold to Vachon Li Mr. Jackson started ' up Mother Jackson's Open Kitchens, he continued to sponsor the team.and the name was changed appropriately to the MoJacks. At Sunday night's game against the Brighton Buzz, a minute of silence was observed honouring the man who has generously sponsored Junior C hockey for 24 years. All the players on the team wore black arm bands. Many will femember Mr. Jackson's role as "Joe" in the B8cugog Choral Society's production of "Show Boat" when he Ken Jackson. Predeceased by a son, Gary, he leaves his wife, Marjorie, daughter Joanne Fowler and her husband, Michael, son, David and his wife, Carol, He was the loving grandfather of Jennifer, Adrienne and Mary "Fowler and Kellen and Christopher Jackson.
