This solution~must remain on the cutting boards and itensils for 45 seconds. Rinse everything fully. However you cook your chicken, it's easy to tell when it's done. Pierce the meat with a fork or knife; if the meat is white and the juices runyclear without a tinge of pink, it's done. If you user a meat thermometer always cook to 185F. In a whole chicken take your reading in the thigh muscle. The dressing of a stuffed chicken should be cooked to 165F. GRILLED CHICKEN & PEPPER KABOBS (Great outdoor delights for the holiday weekend!) 6 chicken breasts skinned and boned (1-1/2 1b.) : 6 peppers; 2 red, 2 green, 2 yellow 1/2 cup apricot spread 1/2 tsp. ginger 2 thep. soy sauce 1 thep. Brown sugar 1 tsp. olive oil 24 (6") bamboo skewers Cut chicken into 1-inch pieces, place in a large bowl and set aside. Core and seed peppers and cut into 1- inch pieces. Set aside in a separate Mix apricot spread, ginger, soy sauce, brown sugar and oil until blended well. Pour over chicken and toss until well coated. Use right away or refrigerate up to 24 hours. Before assembling wooden skewers soak in water for about 30 minutes. Skewer 3 pieces of chicken alternately with 2 pieces of red, green and yellow pepper on each skewer. Just before . serving, preheat barbeque and « grease grill or preheat oven broiler. Barbeque skewers for about 8 to 10 minutes, turning severgl times during cooking. If broiling, set skewers on a wire rack in a shallow- sided baking sheet. Set oven rack in centre of oven, about 8 inches from broiler. Cook for about 15 minutes, turning partway through cooking. 24 kabobs: 50 calories approximately per kaboly, less than 1 gram of fat.
