According to Durham's Bus- iness chairman, there should be agood opportunity for the more than 20 students who have registered for - the college program this fall. "Mr. Lang's statement con- firms the opinion of college officials and the advisory board of local lawyers who developed the program," he said. Durham has two qualified lawyers on staff, Sherry Bassin and Hersh Bromley, who will conduct the new Legal Office Administration program. The major em- phasis of the program is on the procedures of the courts and legal offices. It includes information on the legal system of statutes to provide a good background of study. Contracts, real estate prac- tices, civil procedures, fam- ily law and taxation, wills, trusts, and estate planning 'are only a few of the more specialized subjects inclu- ded. This new course is in addition to the Legal Secre- tarial program which has been operating for several years, providing students with the secretarial skills required in a legal office. After the end of play, the team of Mr. and Mrs. G. Oatway of Oshawa was presented with the trophy and minitures by Mr. Dan Madsen, the owner of the local IGA Store who sponsors the popular yearly event. The 2nd prize was won by Mr. Dick Hall and Mrs. May Price also of Oshawa 'with the 3rd and 4th prizes going to Mr. and Mrs. Jim Mec- Cutcheon and Mr. and Mrs. E. No. 4, Port Perry has good reason to be smiling as & she won first prize and a special Chatelaine prize for brown bread at the CNE Bake Day. last week. In all, Mrs. Philip won nine awards at the Ex this year. Port Perry area woman brings home nine CNE baking awards' Mrs. Rose Philip was just 12 years old when she won her first prize for baking. That was quite a few years ago, as her chocolate cake took top honours'at a fair in Reach Township. Since, Mrs. Philip's baked goods and preserves have been winning ribbons con- sistently, and at one time not too long ago, she was entering as many as 12 local fall fairs, as well as the competition at the Canadian National Exhibition. This year at the CNE, Mrs. Philip, who lives on a farm west of Utica, entered 16 competitions, and won nine awards including four firsts, four seconds, and a special Chatelaine Award of $25. Her first place awards were for brown bread, brown rolls, banana bread and mincemeat tarts. Her prize- winning brown bread was selected for the Chatelaine Award. Besides the first, second and third place ribbons, Mrs. Philip's baking and preserving skills earned her $72 at the CNE this year. "I really enjoy cooking and baking, and entering at the CNE sort of gets in your blood," she says with a smile. She also says she gets a lot of personal satisfaction out of baking, and adds, 'we always have a lot of fun at the CNE, but it's kind of nice to win, too." Mrs. Philip has been entering the CNE compet- itions since 1963, and that year she won two firsts, including one for her choco- , late cake. She also did well in 1967 when her brown bread was' awarded 99 out of a possible 100 points. The judges gave her 92 points this year for the brown bread. Baking Day at the CNE this year saw more than 500 entries in 46 categories, and the judging was very strict. For the baked goods, the judges look for perfection in the shape, crust thickness, volume, colour, texture, and naturally, the flavour. When asked what the secret is to making prize- winning brown bread Mrs. Philip said she believes it's in kneading the yeast a certain way. "The technique to this, she says, is some- thing a person must acquire. She said she could tell when preparing the brown bread that "it suited me, and I was pleased when 1 saw the results." The day before the CNE contest was a busy one for Mrs. Philip, starting with milking chores first thing in the morning, ""I guess I was baking most of the day," she says, "and 'then I had to clean up the kitchen." Obviously, Mrs. Philip is very proficient in the Kkit- chen. But she says she sticks pretty much to the basics - meat and potatos - and doesn't really go in for fancy, exotic or gourmet cooking. Even the best of cooks need to get away from the pots and pans from time to time, and Mrs. Philip enjoys working in the garden, which she says "is good therapy." She also sews, and does a "little dress-making' which has included tailored coats and complete bride and bridesmaid wedding outfits. At one time she was entering her baked goods in several local and regional fairs, but in the last couple of years, she has been limiting her competitive baking to the CNE. "Maybe I'm get- ting lazy," she laughs. But maybe it's also a lot easier carrying home rib- bons and cash prizes than it is something like 175 pounds of flour which she won at a fair one year. Incidently, Mrs. Philip gave away the loaf of brow® bread which took two Hon- ours at the CNE this year, and her sister, Mrs. Frances Day of Brougham was pleased as anything to ac- cept it.
