Wednesday, Oct. 3rd, 1973 No.49 Will employ 70 people New enterprise will produce 1,000,000 meat pies weekly When Ken Jackson first began to serve the people of Port Perry and area with his now widely known butter tarts, he proudly empha- sized he was using a recipe his mother was responsible for. This was almost 20 years ago when he first went into the restaurant business on Queen Street owning and operating the Flamingo Restaurant. In 1966 Mr. Jackson sold his restaurant and began a fast growing business in his garage producing the tasty butter tarts his mother had taught him to bake. The growth of Flamingo Pastries Limited is well known to Port Perry and area residents and in less than a decade has become the largest industry in the area employing well over 100 persons. Monday, afternoon Mr. Jackson turned the sod for 'the construction of a new and large building to house a second exciting and promising enterprise. A new company has been formed, completely indep- endent from Flamingo Pastries Limited, but again Mr. Jackson will be produc- ing goods from a recipe of Ken Jackson, president of Flamingo Pastries Limited believes in patronizing local contractors and labour. Again he has proven this by awarding the contract of the new plant to house 'Mother Jackson's Open Kitchens Limited," to a local his mother and to show his respect and. love and give her the credit he feels she rightly deserves, her name will be part of the company name. Mr. Jackson anticipates that the first production of individual meat pies from Mother Jackson's Open Kitchens Limited will be "rolling off the assembly line" the latter part of April, 1974. "This will be a totally new conception in the production of meat pies, Mr. Jackson said, and will be marketed from coast to coast in Canada, the United States, the Bahamas and Bermuda and sold in major chain stores on the North-Amer- ican continent." The product will be frozen and shipped to a central point in Ontario for further distribution to sales outlets throughout Canada and the United States and possibly flown to the Bahamas and Bermuda. "This idea has been on my mind the last three or four years," Mr. Jackson said, "and from the time we decided to go ahead with the plans it has taken almost nine months to form this company." company. Ltd. and will be larger than the extension to Flamingo Pas- tries Limited opened less than one year ago. It will cover an area 225 ft. in length and 55 ft. in width and a basement 55' x 30', quite similar in construction to the Flamingo addition. The machinery is again manufactured to specifica- tion by Asser Engineering Co., England, specialists in the construction of this type of equipment. Mr. Jackson expects to employ 65 to 70 people when the company begins prod- uction some time in April and over 1,000,000 meat pies will be produced by three 71» hour daily shifts during a five day week. In conclusion Mr. Jackson wanted to emphasize that the meat pies to be produced are basically from his mother's recipe. "My mother was an ex- tremely fine cook and homemaker and I like to think that some of her culi- nary talents have rubbed off on me, and it's in her honour the company has been named "Mother Jackson's Open Kitchens Limited," Mr. Jackson concluded. val meat pies for the North American market.
