And what a treat! We look forward all year to the few weeks in June when fresh Ontario straw- berries are available. Marketing specialists at the Ontario Ministry of Agri- culture and Food suggest you choose plump, well- shaped, solid-red berries. Berries with white spots are not fully ripe. Strawberries ripen only on the vine, so be sure to select the ripest berries available. Watch for berries with bruises and soft spots, as these will spoil quickly and should be usea first. Similar to any fresh fruit, strawberies are best if eaten as soon as possible. When storage is necessary, place strawberries carefully in the refrigerator. Strawberries 'are soft and they bruise easily, so don't pile them high. For best storage, separate the berries and lay them on a flat container, such as a cookie sheet. Keep refrigerated. Just before serving time, gently wash the strawberries in cold water, pat dry and hull. It is important not to hull the berries before washing them, and not to let them soak.
