Jackson, 69, passed away on Friday, Nov. 10 and was laid to rest at Pine Grove Cemetery in Prince Albert. Mr. Jackson had a very suc- cessful business career in Port Perry and is perhaps best known for the famous Flamingo butter tarts which he manufactured for many years. He began his career in the food business as owner of the popular Flamingo Restaurant on Queen St., which he sold in 1966. : After selling the restaurant, Mr. Jackson began baking and selling butter tarts from his garage on Simcoe St. The busi- ness grew so quickly he opened a state-of-the-art bakery in 1968 At its peak Flamingo Pastries employed more than 100 area residents and was producing sod for a new venture, Mother supporter of the community and Jackson's Open Kitchen"s. Once again, under Mr. Jackson's lea- dership and using his mother's recipes, the company began its growth into a [_ . world-class facility. A major expan- sion of Mother Jackson's in 1990 enabled the company to become a major national supplier of pastry pro- ducts. He retired from the company KENNETH F. JACKSON many organizations and projects were recipients of his generosi- ty. Expansions to Community Memorial Hospital, the new Scugog Arena and Scugog Memorial Library, all benefited from his generous and special attention. He is also remembered in sporting circles as the sponsor of Port Perry's first Junior C team, the Flamingos, who later Local entrepreneur was founder of Flamingo Pastries and Mother Jackson's Open Kitchens became known as the Port Perry Modacks. In honor of their 24 year spon- sor, members of the current Modacks team dressed in game uniform, paid their respects to Mr. Jackson and his family at the Low and Low Funeral Home in Port Perry. Mr. Jackson was a member of the Royal Canadian Legion, Branch 419, the Rotary Club of Port Perry and was fundraising chairman for the Scugog Memorial Library when it was being built in 1980. He leaves behind his wife Marjory, daughter Joanne Fowler and her husband Michael, son David Jackson and his wife Carol, brother Earl Jackson of Lindsay and his grandchildren Jennifer, Adrienne and Mary Fowler, and Kellen and Christopher Jackson. : Funeral services were held Monday, Nov. 13, 1995. United Church to hold auction Port Perry United Church will hold its fifth annual Silent Auction on Saturday, Nov. 18 in the Church Auditorium at the corner of Queen and Sim- coe Streets. Bidding will open at 10 a.m. and close at 4 p.m. with the highest bidder taking their chosen item (8). The only exception will be on items that will have two or more bids regis- tered after 3:45 p.m. All of these bidders will have a last chance to register a secret ballot on their speci- fied items, as their final bid at4 p.m. A quilt measuring 83inches by 102 inches, ti- tled "Friendship Dahlia" is one of our beautiful items up for sale, hand ap- pliqued and quilted by our own Martha Unit of the U.C.W. The quilters will be available to answer any questions that you might have. Other handcrafted items include table cloths, napkins, placemats, girl dress, sweaters, afghans, baby 'quilts, rompers and blankets, handwoven bas- ket and Victorian Christ- mas wreath. | This year's event in- cludes a "Christmas Cor- ner" shop where you will be able to buy all of those neat and fancy gifts that you will not have time to make before Christmas. Hot luncheon will be served by U.C.W. from 11:30 a.m. to 1:30 p.m. and it is guaranteed to fill you up and provide you with the energy for the excite- ment to come. In addition to our tradi- tional bake sale, a cookie walk is arranged so that you can go home with your own selection of your fa- vorite cookies for the up and coming Christmas fes- tivities. The Silent Auc- tion, also includes baking items such as Christmas carrot pudding, freezer feasts, box of preserves and basket of Christmas baking.
