"Which is better for you, butter or margarine?" Saturated fat is Solid at room temperature, comes from animal sources and in excess can increase the risk of heart disease. Butter is just one example of a saturated fat. Unsaturated fat is liquid at room temperature, comes from veg- etable oils, such as olive, canola and sunflower are examples of unsaturated fats and are used to make margarines. Here is where the controversy lies. Margarine is made from liquid oil but in order to make the oil spreadable many margarines go through a process called hydrogenation. This turns a healthy oil into a not so healthy harder fat. Newer technology has introduced heart healthier types of margarines and there are increasingly more brands to | choose from. If you choose margarine, buy a soft tub margarine, preferably one that is "non-hydrogenated" as stated on the label. You may prefer to use butter but whichever you choose, limit how much you use. Tablespoon for tablespoon butter and margarine con- tain an equal amount of fat or 12g per tablespoon. Total fat recom- mendations for the average female = 65g per day and for the aver- age male = 90g per day.
