To do this in the case of these drinks the process of vinous? fermentation must be explained, showing the change by which the new substance alcohol is thus formed from healthful fruits and grains. Such a basis is the only scientific meth od by which we can prove that while grapes, apples, and barley are good the wine, cider, and beer made from them are poisonous and bad. If this is omitted our knowledge is not duly arranged because, statements con cerning the dangerous character of fer mented drinks are then only assertions without proof, which is certainly unscien tific in method. The German claims his "beer ig harm less and nutritious," the superficial ob server that the "ligh ter wine are the cure or prevention of drunkennessthefarm- er insists that because his "apples are good his eider must be also." These fal lacies lead°t6 drunkenness. The study of scientific temperance omitting to describe the tendency of . beer, wine and cider to create the alco holic appetite, is lik« failing to tell of the -danger of the rapids to a person proposj ing to row across the Niagara just above the falls. Such omission in either case is unscientific and inhuman. It is a half truth, which is often the most dangerous form of untruth, and therefore is not "knowledge duly arranged." 2d.
