COOK'S CORNER (by Mark Schae«teen> For children or invalids, for dieters or heavy eaters, baked custard is an ideal dessert. It is easy to prepare and an ideal accompaniment to a heavy dinner. It may be carried to school in the lunch box. It furnishes good proteins without too many calories so it satisfies the girl who is trying to reduce and with 'the addition of cream or a carmel syrup it becomes a fine dessert for that underweight youngster too. The most frequent complaint is that custard becomes watery. Try ft this way. Baked Cestui 4 cups scalded milk (heated to Just below boiling point); < medium sited eggs; S/4 cup sugar; H teaspoon salt; 1 teaspoon vanilla. Beat eggs slightly. Add scalded milk, sugar, salt and vanilla. Mix well. Strain into pitcher or other easy-tanpour container. Pour into custard cups, filling cups as full as possible. Place cups in a shallow pan and put in 300 degree oven. Add water to pan after putting it into oven--easier to handle that way. Bake about one hour or until silver knife inserted into custard comes out clean. Keep water from boiling and custard will not be watery. Try this on your friends who; "never eat dessert" and see lf! they won't change their minds. CARD OP THANKS We would like to take this means of thanking friends, neighbors and relatives for their assistance this past week in saving the great amount of feed which would otherwise have been destroyed when our silo fell Friday morning.
