One of its popular variations is hot fudge sauce. Mrs. Pearl Z. Janssen, foods specialist at the University of Illinois, gives this easy-to-make recipe. Make the sauce in quantity, store it and use to dress up holiday desserts. ' Hot Fudge Sauce 1% cups evaporated milk 2 cups sugar 4 ounces (squares) unsweetened chocolate % cup butter 1 teaspoon vanilla % teaspoon salt Heat milk and sugar to boiling pojft, and boil "hard for one minute while stirring. Then add the uncut chocolate and continue to stir and heat until the chocolate is melted.. Remove mixture ffom heat and beat with a rotary beater until smooth. Add butter, vanilla, and salt; mix well and cool. When ready to serve the sauce, reheat it over a very slow heat with stirring, or in the top of a double boiler. This hot, thick chocolate sauce is 'delicious on ice cream, or a plain cake. It is especially good on peppermint stick ice cream. Nut Variations • Glazed, salted, spiced and minted nuts make a favorite Christmas goodie for your family to nibble on during holidays. Mrs. Janssen suggests that you make your own now that nuts are expected to be lower in price because of the unusually go6d crop. Mrs. Janssen says you can takf a shortcut in making salted nuts by using your oven rather than the top of the stove. Bleach almonds and peanuts before salting. Wash and drain and then spread the moist nuts in a single layer on a baking sheet or in a shallow pan. Sprinkle them evenly with salt, allowing about two teaspoons of salt to one pound of shelled nuts. Then bake the nuts for about 20 minutes or until they are a delicate brown in a moderate (350° P) oven. Stir occasionally to assure even heating and browning. As soon as the nuts have cooled, they will be crisp. Spiced almonds can also be made easily and quickly in the oven. Coat unblanched almonds with egg white. Then roll them ih a mixture of sugar and cinnamon, using one tablespoon of „ cinnamon to one-half cup of sugar. Spread on a baking sJjeet, and bake in a slow oven (300# F) for about 30 minutes. Other variations are the popular orange pecans and minted nuts. To prepare them, place fondant in a bowl over boiling water. Add a few drops of water and heat, while stirring, until the fondant is melted and hot. Remove the bowl from heat, and add grated orange rind for orange pecans or a couple of drops of oil of peppermint for the minted nuts. Beat the mixture until it starts to thicken. Add enough nuts to use all of the the fondant to coat the nuts. Then spread the coated nuts on waxed paper, separate them and let them dry. According to a prediction released recenUy_ by the Association of Casualty and Surety companies, the probable death toll from accidents involving high speed or speed too fast for con. ditions will amount to 124 victims. Alcohol, taken too freely by both drivers and pedestrians, is expected to 'account for another eighty-one victims. Before the end of the weekend, which starts officially at 6 p.m. Dec. 23 and closes at midnight Dec. 26, there also will be thirtyseven deaths in accidents caused by failure to keep to the right of a centerline, twenty-six more for failure to yield the right of way and another twenty-three in crashes caused by overfatigued drivers or drivers actually asleep at the wheel. In releasing the prediction. Thomas N. Boate, manager of the association's accident prevention department, pointed to overzealous holiday celebrants as principal offenders in the accident picture. "This year, as every year," Mr. Boate said, "the party-goer who just doesn't know when to quit will substitute grief for Christmas joy when he kills himself, or someone else, on the way home from an overindulgent celebration. Any driver who drinks, even though he may not be obviously drunk, is a potential killer on the highway.
