Carlson, Pastor Church School: 9:45 Worship Service: 11:00. % cup butter or margarine % cup flour 1 teaspoon salt % teaspobn paprika 1 teaspoon dry mustard % teaspoon Worcestershire sauce 2 cups milk 8 cups cooflted rice 2 cups ground cooked ham 5f tablespoons minced parsley 2 tablespoons minced onions 3 eggs 2 tablespoons water 1 cup cereal crumbs y*, cup well-drained horseradish 1 tablespoon lemon juice Melt butter in small saucepan: stir in flour, salt, paprika, and dry mustard. Gradually stir in Worcestershire sauce and 1% cups of the milk. £ook until thickened, stirring constantly and rapidly. Remove from heat. Combine 1 cup of the sauce, rice, ham, parsley, onions, and 2 of the eggs which have been slightly beaten; mix thoroughly. Chill well and shape into 12 croquettes. Combine remaining egg and water and beat slightly. Roll croquettes in cruipbs, then dip in egg mixture and roll again in crumbs. Fry in deep hot fat (375®F.) until golden brown. Drain on absorbent paper. Thin remainder of cream .sauce with remaining % cup of milk. Heat thoroughly. Stir in horseradish and lemon juice. Serve over the hot croquettes. Yields six servings.
