Mrs. Mary Hubbard, University of Illinois foods specialist, gives the following check list for thes^> new homemakers. Number of guests. This determines the size of turkey, and the size will determine roasting time and equipment. Turkey sizes are more varied than ever. You can get individual pieces or one-fourth, one1- half or whole birds. Large birds give more meat per pound than small birds. For example, you'll t be money and meat ahead to buy a 24-pound turkey and split it with someone (or freeze half) than to buy a 12-pound bird for your- ._|_gelf- - Generally speaking, allow about one-half pound of ready-to-cook meat per serving. <, And don't forget the guest who would enjoy two or three servings. Equipment. You'll need a shallow pan. rack, skewers, string and, if you like, cheesecloth and meat thermometer. Type of turkey. Whole turkeys generally fall into three categories quick frozen, frozen stuffed and fresh-whole Carefully follow directions on the wrapper for .the first two. remembering that frozen stuffed birds must remain solidly frozen from the store to your oven. If you select a fresh bird, clean it thoroughly (remove pinfeathers, if any), wrap'loosely and store in the refrigerator at 36 to 38 degrees F. unti] ready to use. Roast in a very slow oven (300 to 325 degrees F.) for the required time. A temperature chart is, usually given on the package of most frozen.-turkeys. As a general guide, cook a 10-12-pound bird 4r 2 to 5 hours, and allow an additional 30 minutes to prepare it for seiving arid to make the gravy. Cook larger b i r d s a b o u t 2D m i n u t e s p e r pound, , Test for doneness by temperature or "feel." If you use a meat thermometer, the temperature should register 190 degrees F, when the bulb is resting in the center of the inside thigh musclc adjbining the body cavity. The drumstick meat should feel soft, or the drumstick itself should move easily. When the turkey is about two-thirds done according to the timetable, release the legs by cutting the cord holding the drumsticks so, that the heat can reach the inside thigh. From oven to table. Place the turkey on a large platter, ready for serving. Be sure to have a sharp knife ready for the host when he carves. The secret of good roasting is In use a low oven temperature and to allow_plenty of roasting time.
