Nutrition scientists, too, work from surprising angles to get a picture of what a nutrient does for man. To manage a close-up of vitamin Be, for example, they have had to create a Be deficiency severe enough to see striking symptoms. Now. because of work done by Dr. Kenneth Calhoun of the American Institute of Baking in Chicago, researchers, doctors in hospitals and in public health may have a new, sensitive test to bring mild vitamin B« shortages into sharp focus. In his work with animals, Dr. Calhoun first created a Be deficiency. The animals began at once to excrete calcium oxalate crystals--the stuff that many kidney stones are made of. Crystals were apparent even with a mild deficiency. But when an adequate amount of vitamin B« was added to the diet, calcium oxalate excretion stopped immediately. These results prompt speculation about the possible relationship between vitamin Bq and kidney stones in man. Researchers at Harvard University confirm Dr. Calhoun's findings and have extended their studies to man. Although Nature has been generous with vitamin Be, a mild deficiency is possible unless we eat a variety of foods. Among the best sources of vitamin Be are whole grain bread and cereal, meat, fish, fresh fruits and vegetables. A big advantage to using baking soda as a fire extinguisher is that soda's a pure food product. The food can be rinsed off and safely eaten. -f •t i During the holiday season when eggnog is featured by local dairies, use the milk and egg-rich beverage as the custard base of a decorative fruit dessert This party mold so delicate of texture and lofty of Wight only requires the blending of four ingredients: bottled eggnog, unfavored gelatine, canned fruit cocktail, and heavy cream. Unflavored gelatine gives the mold its beauty of design and protects the light airy texture. The dessert can be chilled in a spring form pan lined with lady finger cookies, or it can be chilled in individual serving dishes. Eggnog Fruit Chiffon 12 lady fingers 2 envelopes unfiavored gelatine 1 can (29 ounces) fruit cocktail 2V6 cups commercially prepared eggnog ye teaspoon salt teaspoons vanilla 1 cup heavy cream, whipped Split lady fingers; cut off one end to stand upright and place around sides of an 8-inch spring-form pan. Drain fruit cocktail; measure 1 cup of the syrup. Sprinkle gelatine on syrup in saucepan to soften. Place over low heat, stirring constantly, until gelatine is dissolved. Remove from heat; add eggnog, salt and vanilla. Chill until mixture mounds slightly when dropped from a spoon. Fold in 2 cups of the drained fruit cocktail; fold m whipped cream. Turn into prepared pan; chill until firm. To unmold, release spring and remove sides of mold carefully. Garnish with additional whipped cream and remaining fruit cocktail.
