Children especially love making this no-cook fondant. Use V2 cup evaporated milk to 2 pounds sifted confectioner's sugar. This mixture is good with nuts, chocolate, peppermint, coconut or candied fruits. For crystalline candies like fudge and penUche, the higher whole uilk solids content of evaporated milk helps prevent the formation if "sugary" crystals. This gives an exceptionally smooth, creamy exture to your festive candies. Here's a fudge recipe that should . Arin you a kiss even without mistletoe: Chocolate Mallow Fudge - 1 cup evaporated milk I Vfc cups miniature marsh- 2 cups sugar mallows 2 6-ounce packages (1 cup 1 teaspoon vanilla each) semi-sweet • chocolate pieced , Combine evaporated milk and sugar in saucepan. Place over low heat and stir until sugar is dissolved and mixture comes to a boil, [ncrease heat and boil 2 minutes, stirring constantly. Remove rom heat; add seiyi-sweet chocolate pieces and vanilla and stir antil smooth. Turn approximately % of t^e chocolate mixture into vaxed paper-lined 8-inch square pan. Cover with miniature narshmallows, pressing marshmallows gently into chocolate. Top with remaining chocolate mixture. Chill and cut into squares. Afield: Approximately 2 pounds.
