Robert McClory of Waukegan, in his talk to the Chamber of Commerce Thursday * night. At one time they cost a quarter of a million dollars' a year, but have been reduced to few at present.. Oddest of the "legislative oddities" in our opinion was the bill (which passed House and Senate) which^ would require every cat or kitten to wear a bell, according to McClory. Fortunately Gov. The club brought ten' boxes of candy for the residents at the home. The boxes were the handiwork of Mrs.- Ed Cannon, who trimmed clear plastic boxes with shells,places and frills. The women also adopted one of the men residents for Christmas and left a plaid flannel shirt and socks for him. Earlier in the month Mrs. Fiala and Mrs. Kleebert delivered two bushels of g'olden delicious apples, which were donated by Mrs. Kinley Engvalson. to the county home. The Cooking is a '^jvatch and wait" process, so be patient. The results will be worth the time you spend. More carmelization as well as more even browning will take plpce. These processes give the' candy its distinct flavor and color. CoQk the sirup to 300-310 degrees F.. or ° the hard-crack stage. A candy thermometer is more accurate than the coldwater test for checking temperatures. If you prefer more caramel' flavor and color, cook the ; candy mixture beyond 300 de- : grees F. But at this high temp- . ture you will need to watch and stir very carefully to get , the desired amount of caramel- , ization without getting a bitter taste. ' ' I Add a little soda to the sirup mixture toward the end of the cooking period. Soda* helps tonmake the candy tender and brittle: It also promotes caramelization. j If you use raw peanuts, add them to the sirup as^ soon as the sugar ^dissolves. Use several' greased cookie sheets if it will help make the layers thinner. Then,, when y, is nearly cool, stretch it as thin as^ possible. Don't dawdle, because time is valuable. Corn sirup is often added to peanut „ brittle to prevent the formation of crystals when the candy is stored.
