The safe driving rules are as follows: 1. Learn to adjust your speed to varying road, weather and traffic conditions. 2. Elizabeth Nyholm, University of Illinois home economist, says that moisture helps to tenderize the less tender cuts by converting some of the collagen in the muscles to gelatin. Collagen is a protein in the connective tissues of all meats. More is found in the less tender cuts than in tender cuts. Age, sex and breed of the animal and the amount of exercise it gets all affect the amount of collagen in a piece of meat. Braising and steaming are two ways to prepare the less tender cuts of beef with a little njpisture, according to Miss Nyfiolm. To braise, first brown the meat. Then reduce the heat and add a few tablespoons of wat^tv tomato juice or sour cream. Cover the skillet tightly and cook over low heat. If the moisture evaporates, add a little more liquid. Tomato juice and sour cream add a distinct flavor to meat. Some food specialists also think that the acids help to tenderize the meat. In steaming, you don't add any moisture. First, rub the meat with salt and flour. Then brown it in a heavy skillet, electric frying pan or Dutch oven. Cover and cook in an oven at 300 to 350 degrees F.. or continue cooking on top of the range. Cook about 30 minutes per pound of meat. The steam acts the same as added moisture in tenderizing meat. Dainty gloves may help create a picture of loveliness, but a driver needs good, substantial gloves for a firm grip on the wheel. A picture hat or filmy veil may be appropriate for most social occasions, but they may obstruct . the . driver's all-important view of the road ahead. For safety behind the wheel, a woman's driving outfit should be comfortable and non-restricting, regardless of fashion, says safety experts. So, what is milady to do if she wishes to appear fashionable, yet must drive? She can't go to a party dressed as if she were going to the corner supermarket. The simplest answer to this is a driving wardrobe, kept conveniently in the car. All it requires is a pair of flat, practical shoes, a pair of driving gloves and a small hat or scarf. These can be stored, ready for instant use, in the pockets of a cloth shoe rack attached firmly to the back of the front seat. Then, when a social engagemerit is in the offing, a lady can enter her car, kick off her spiked heels, lay her picture hat and white gloves on the front seat and make a quick change into comfortable driving gear. When she arrives safely at her destination, another quick change prepares her to be the belle of the ball. By doing this, a woman will find that driving is much easier, since she doesn't have to worry about her party finery and can concentrate on the road. Most important, her family won't have to worry about losing her. You're not the only good driver on the road, and you know it. That way you can anticipate driving errors by others and be prepared to take corrective action. Be ready and willing to yield the right-of-way at all unprotected intersections. You know it isn't worth risking your life for the few seconds you might gain at an intersection, but assume the otjher driver doesn't. Assume he's going to make a sudden stop at any moment, and give yourself room to stop safely in case he does. Watch parked cars at the curb when you approach them. Assume that the driver may suddenly pull out into traffic without checking to see you coming. Be ready to avoid him if he does. It may seem uncharitable to consider all other drivers a» foolish or incompetent, but it's ! smart for you to drive as I though they were! j You've got to give the kids credit. In spite of dramatic i headline stories about juvenile J delinquents, most of today's1 teenagers are a level-headed, lot whose sound thinking often puts adults to shame. | For example, American Youth magazine invited teenagers to submit comments on the advisability of requiring driver-training courses as a prelude to obtaining drivers' licenses. The responses revealed that teen-agers -- some of them at least -- have arrived through independent thinking at conclusions that parallel those of leading traffic safety experts. One 17-year-old girl went directly to tha COB* O£ the problem when she wrote, "A driver training course should be required for obtaining a driver's license because it would ultimately eliminate all poorly trained drivers from the highways. Driver training obtained from a relative or friend is unreliable as well as dangerous, unless that person is a qualified instructor and unless the training takes place in a dualcontrol car. "A driver education course has many benefitsyto offer the future driver," the^youngster continued. "Since theNxmrse is given over a period ofva fewmonths, the length of time is adequate to give the student a thorough understanding of the automobile and how it operates." Another teen-ager wro\« that the most important lessen taught in high - school driver training courses is the necessity for acquiring the right attitude for safe driving, sometimes safety authorities have had difficulty in impressing on adult drivers. One youngster wrapped the whole subject up in a manner worthy of the most thoughtful of adults. "As a result of driver training, young adults are better equipped to take on the tremendous responsibility of driving a car," he wrote, "and the percentage of accidents among teen-agers is greatly reduced."
