Of give and take. He learns that it doesn't pay to be too sensitive a soul --that it's better to let some things go over his head. He learns that carrying a chip on his shoulder is the easiest way to get into a fight -- and it doesn't take long. He learns that all men have burnt toast for breakfast occasionally, and he shouldn't take the other fellow's grouch too seriously. He learns that the fellow in a less lofty position is human and it doesn't do any harm to smile and say "good morning." He learns that most everyone else is ambitious just as he is, that they have brains that are as good or better, and that hard work and not cleverness is the secret of success. He learns that nobody ever got to first base alone, but only through a cooperative , effort do we move along to better things. He learns that the folks are not any harder to get along with in one place than another, and that "getting along" depends pretty much on how hard he tries. As McHenry and the number of school students increases, almost everyone is acquainted with at least one school drop-out. Added to these throughout the nation, there are one million young people between the ages of 16 and 25 adrift on city streets. Most of these are "drop-outs" -- without schooling and skills, and unemployed. We pride ourselves on our educational system in the United States, where an estimated $18,000,000,000 was spent in 1961-1962, and on our ability to provide jobs for our youth. Yet today, 1,000,000 young Americans are looking for jobs. Surprising as it may seem, these young people between 16 and 25 make up the biggest single age group of unemployed workers in the country. Unemployment in this age bracket is at least twice as high as in older age groups. Noted educators have described the situation as "the great American tragedy of our time" and "potentially the most dangerous social condition in America today." The "squeeze play" of baseball is becoming familiar in the business world for these young folks. Unable to qualify for the skilled jobs that are open, they now find the supply of unskilled jobs dwindling, mostly through automation. The student with thoughts toward becoming a "drop-out" would do well to ponder on the prediction among those "in the know" that within the next decade, post-high school education for two years -- at a junior college or technical institute -- will replace the high school diplomas as - a basic requirement. Its low cost per serving portion means good food value with budget savings. Aside from its thrifty nature, ham is the featured star of an .endless variety of tempting meals. With a little advance planning, you can have the ham cut in meal portions and serve each part an a different manner. For example, a few top slices can be cut from a whole or half ham and reserved for broiling. The rest of the ham can be baked in the traditional manner. Since you are preparing and serving smaller quantities, the "pre-cut" plan is also a good way to eliminate left-overs. The diagram above shows one way of cutting a half ham for three separate meals. Simply wrap cuts of ham in transparent saran and store individual pieces in the refrigerator until time of use. This quality plastic food wrap clings snugly and molds itself to the meat contours, preventing loss of flavor and quality. Meat from the aitch bone piece can be used for hearty ham loaves, casseroles, omelets, or creamed dishes, such as Ham A La King Deluxe. Ham A La King Deluxe 1 small green pepper, 1 cup milk minced Vi lb. sliced fresh mushrooms or 2-4 oz. cans, drained 2 tablespoons butter 2 tablespoons flour 3 tablespoons butter 1 cup thin cream 2 lightly beaten egg yolks 2 cups diced cooked ham & cup diced pimiento 1 teaspoon lemon juica 2 tablespoons sherry Salt and pepper to taste Cook green pepper and mushrooms in butter until soft but not brown. Make cream sauce by blending flour and butter in top of double boiler; gradually add milk and cream. Cook over direct heat, stirring constantly until thickened. Mix a little sauce with egg yolks, then combine with rest of sauce. Place top of double boiler over boiling water. Add rest of ingredients and stir until sauce reaches right consistency and is hot. Serve on toast points or patty shells. Makes 6 servings. CROP REPORT Plowing for corn and soybeans is more than 90 per cent completed, according to a report from the Illinois Cooperative Crop Reporting Service. This is about three weeks ahead of the five-year average and two weeks earlier than 1962. Plowing advanced most rapidly in the lower half of the state. Major activities have been the preparations for corn and soybean planting. Winter wheat prospects continue good to excellent and the crop is of good color and making good growth, according to the report.
