These Hot Mincemeat Tarts are served with turkey. They have been fixed specially as a relish to go with turkey. The apple saiice, wine and consomme cut the richness. The real, robust meaty flavor of mincemeat suddenly emerges. The tarts are not intended to crowd out the traditional cranberry sauce. Rather, they're an addition to the turkey's fun fixins. Some day you might also serve them with a roast of beef or lamb or pork. But first, do enjoy these Mincemeat Tarts with turkey. J/2 CUP bouillon or consomme 2 cups Canned apple sauce A cup dry white wine _ 1 teaspoon grated lemon rind 1 package (9-ounce) mince- Tiny baked tart shells meat Lemoi^ peel slivers Combine liquids and bring to a boil; reduce heat. Crumble mincemeat into hot liquid and cook, stirring constantly until mincemeat has absorbed most of liquid. Stir in apple sauce and grated lemon rind; continue cooking about 8 to 10 minutes, or until mixture is very thick and almost dry. if ill each tart shell with mincemeat mixture. When ready to serve, heat quickly in a hot oven. Garnish with slivers of lemon peel and arrange around turkey on platter. Serve with turkey as a relish or vegetable. Makes 15-24 tarts depending on size of shell used. r"\ STtlDY JUNIOR COLLEGE The junior college will be studied in a Northern Illinois university division course next semester at Woodstock Community high shool. Dr. William Ogilvie, associate professor of education, will teach The Junior college (Ed. 530) beginning at 6:30 p.m. Wednesday, Feb. 3. The course offers three semester hours of graduate credit. Ogilvie will trace development of the junior college movement, its present status, ourposes, functions, organizations, and curriculum. The class also will "study characteristics of the emerging community college. PROMOTE GOOD WILL The first step* in creating a closer business and community Relationship between the state of Illinois and the South American country of Brazil was taken last week with thfc formation of the Northern Illinois Partners, of the Alliance Planning Committee. Gene Graves, executive director of the Board of Economic Development, has announced that both the Northern and Southern Illinois Planning committees will work together to establish foreign trade opportunities and to exchange ideas with their counterparts in Brazil in such activities as community development, eponomic growth and social services. IT PAYS TO ADVERTISE Milk, I^ilk Everywhere With Many Drops To Drink • It should be of interest to dairy product users that Illinois produced 4,113 million pounds of ,milk this past year, about half of which was drunk as fresh whole milk. And where did tfee remainder go? It made more than 26 million pounds of creamery butter, 28 million pounds of American cheese, 39 million pounds of Swiss cheese, 19 million pounds of other cheese, 42 million pounds of cottage cheese and 39 million gallons of ice cream, as well as 90 million .pounds of evaporated, canned, condensed and non-fat dry milk solids. The number of cows has dropped sharply in recent years, but milk production remains about the same. In 1954 there were 824,000 milk cows in Illinois, in 1963 this has decreased to 495,000 and last year 'slipped to only an estimated 470,000. However, production per cow has jumped from 6,300 pounds of milk ten years ago to 8,160 pounds in 1963. McHenry county shows a record level production of 9,333 pounds per cow.
