Turkey can afford a delicious feast if it's prepared properly. But, if it's not, the bird could cause real trouble. Yeas see,,... tux^eya * o m etimes cont&in ©' bacteria called Salmonella which -- if not destroyed in the cooking process -- can cause severe distress. Such symptoms as abdominal pain, diarrhea, fever, nausea and vomiting can appear anywhere from six to 48 hours after eating turkey infected with this bacteria. And, although these symptoms usually disappear after 72 hours, a victim can pass the infection on to others for weeks after. No one is immune to Salmonella infection. While it can strike every member of the family, however, children and older people are particularly vulnerable. To avoid Salomnella poisoning this Thanksgiving, take these precautions: Cook the giblets BEFORE putting them in the turkey' dressing. If bacteria is present in the giblets, it may not be destroyed during the roasting process. In fact,it could rapidly multiply. Don't dress your bird early and refrigerate it overnight. Chilling to preserve the dressed turkey only complicates the problem of bacterial growth during the baking process. When you pack the stuffing in the turkey, pack it lightly. That way you'll allow more room for heat to penetrate and cook your bird more thoroughly. b Refrigerate leftovers as soon as possible after dinner. Through its "Stars of Cheer" Christmas Campaign, the Salvation Army in the Chicago area will bring happiness to some 44,000 people who might otherwise be friendless and forgotten during this joyous season.
