The problem is that it's almost impossible to get the meat into the average oven if you insert the thermometer at the top of the roast. So extension nutritionists at the University of Illinois suggest putting the thermometer into the side of the roast instead. Just be sure the bulb rests in the thickest part of the meat and doesn't touch the bone. It makes no difference whether you read it from the top or the side. Can sweet cream be frozen satisfactorily? If so, what is its storage life? How should it. be thawed? Sweet cream that has been pasteurized Vand that has at least 40 percent butterfat can be frozen satisfactorily, reports Mr. Aiko Perry, member. of the foods research staff, University of Illinois Department of Home Economics. It can be stored for two or three months without marked deterioration. However, it should be packaged properly in waxed containers and frozen as rapidly as possible. The storage temperature should be "0\degrees F. or lower. Thaw the cream in the refrigerator or at room temperature and mix it lightly before you use it. Cream with less than 40percent butterfat is not satisfactory for freezing. The low temperature causes the butterfat to separate from the milk or whey.
