The "twist" is a flavorful stuffing that is rolled into the hearty hamburger in je|jy roll fashion. Delicate jnushrooms, bread cubes, parsley, qjiion, and zesty American blue cheese form the delicious stuffing. Rolled Stuffed Meatloaf can be prepared ahead of time and frozen. Or, better yet, double the recipe, serve one tonight and freeze the other. Helen's Favorite Rolled Stuffed Meatloaf (Serves 8) 2 pounds ground beef 2 cups soft bread cubes 1/2 cup milk 1/4 cup minced onion 1 teaspoon nutmeg 1 teaspoon salt 1/2 teaspoon pepper 1 ege Soak bread cubes in milk. Combine all Ingredients and mix thoroughly. Pat meat into an 8x14 rectangle on double sheet of foil. ^Filling 1/2 cup minced celery , 1/2 cup mushroom pieces V/\ 1/2 cup minced onion ,J 1/2J cup butter 1r cilp soft bread cubes 1 /2 cup chopped parsley 1/2 cup crumbled American blue cheese (about 3 ounces) Saute- celery, mushrooms, onion in butter. Add rest of ingredients and mix well. Spread over meat mixture. Roll up in foil, securing well. Freeze. Bake at 450 degrees for one hour and 15 minutes. Open foil for last 15 minutes to brown. If not frozen, bake at 450 degrees for 45 minutes. Open foil,, last 15' minutes. / FOR FAST ULTS ITfiM: When substituting granulated brown sugar for regular brown sugar in recipes, tead the substitution table on the package. In some recipes, additional moisture may be needed. Granulated brown sugar is easy to measure and requires no packing in the cup.
