To assist in meal planning, 'the Plaindealer would like to print favorite lenten dishes of McHenry area cooks. We are starting with some talented culinary artists from our own office, whose taste treats we have had the opportunity to enjoy first hand. An invitation is extended for others to submit favorite recipes in the weeks ahead to help homemakers build up their collection. FISH FLAKE CASSEROLE (By Mary Miller) 2 cups milk, scalded 1 cup rice - half cooked and drained 2 tablespoons grated onion 1 teaspoon salt % teaspoon pepper Vi teaspoon sugar 2 tablespoons lemon juice 1% cups flaked fish-Salmon, tuna or any other choice of cooked, s canned or smoked. 3 tablespoons chopped parsley 3 eggs Vi cup melted butter Combine the milk, rice, onion, salt, pepper, sugar, lemon juice, salmon and parsley. Mix well. Beat eggs well and add to previous mixture stirring thoroughly. Pour into buttered casserole or baking dish. The proposed amendments and revisions to the constitution^ and by-laws were read for the second time, voted upon and accepted. Mrs. Darlene Fiske of the Illinois Audubon society presented a very informative program, showing slides of birds who frequent the area this time of year. Members were reminded of the bake sale to be held at the McHenry State Bank on Satur-t day, Feb. 15, from 9 a.m. to 3 p.m. The homemade goodies should be brought in as soon after 8:30 a.m. as possible. Proceeds from the sale will be used to finance the picnic in July. Members who have signed up for the defensive driving course will have their first meeting on Feb. 26 at the West campus. Feb. 24 will be Fun Night. Members are asked to bring a white elephant, gift wrapped, and enjoy group singing led by Allen Lyndrup. The group will also be entertained by Mrs. Doris Chambers, a ventriloquist. ^-Tickets for the St. Patrick day dinner on M.iren 10 are still available from Mrs. Crawford. Notice To Brides In order to better serve McHenry area brides, the Plaindealer sends wedding forms to all those whose engagements have been announced on our society page and carry a definite date. We ask that these completed forms be returned three days prior to the wedding. Complete details will appear only during the week following wedding except in the case of out-of-state weddings, where an additional week is allowed. Johnsburg PTA To Observe Pupi. Participation Night Six states" in U. S. each produce over a million bales of cotton, in the average year. "Student Participation Night" is the title for the Feb. 18 meeting of the Johnsburg P.T.A. This evening the students of the elementary and junior high schools will participate in the demonstration of art, electronics and science. Mrs. Edna Robel, director of the art department, will give an actual classroom demonstration of teaching art over closed circuit TV to several of the fourth graders. There also will be a display of art objects done by the elementary and junior high students. The electronics club, headed by Donald Hruby, will demonstrate how to operate a short wave radio. Several of the students are licensed by the Federal Communications commission to operate this equipment. The club will video tape the meeting and several demonstrations for re-broadcast later in the evening. Various science projects will be exhibited in the multi-purpose room and the science lab by the Science department, operated by Ellis York. There also will be demonstrations of science projects performed by the students in the multi-purpose room. This interesting evening will begin at 8 p.m. in the multipurpose room of the Johnsburg Junior high school, after which refreshments will be served. brown on top. TUNA SUPREME (By Phyllis Ehredt) Arrange in alternate layers buttered ll/2 quart baking dish: 2 cups tuna (two 7 oz. cans) in large pieces 2 cups crushed cheese crackers 3 cups medium white sauce 3/4 cup sliced ripe olives Finish with a sprinkling of the crushed cheese crackers. Bake in Moderate (350 degree) oven 35 minutes. Serve hot. Six servings. FISH CASSEROLE (By Helen Seborg) 4 tbsp. butter, melted 2 tbsp. flour 2 cups milk 3 lbs. boiled fish, boned and flaked 2 cups potatoes, cooked and sliced 2 medium onions, sliced 2 cups soft bread crumbs salt and pepper to taste Blend 2 tablespoons butter with flour; add milk and stir until thickened. Set aside. Place half the fish, potatoes, onions, and crumbs, reserving some crumbs, in layers in greased 2-quart casserole. Add seasonings and 1 cup white sauce. Repeat with remaining fish,pototoes, onions and crumbs. Add remaining sauce and top with reserved crumbs. Dot with butter. Bake 1 hour in 325 degree oven. i MR. AND MRS. TONY PUMPHREY WED FEBRUARY 8 --Miss Laura Leigh Perry and Mr. Tony Pumphrey were married in a beautiful wedding solemnized in Christ the King Catholic church, Wonder Lake at 3:30 in the afternoon Saturday, Feb. 8. Bay road, announce the engagrment of their duaghter, Mary, to Dennis Moore, son of Mr. and Mrs. Gilbert Moore of Eastwood Manor. Miss Malpede graudated in 1967 from Marian Central high school. Beat well. Sift flour and baking powder together and add to previous mixture. Mix well, add melted butter, beating steadily. Beat the egg Whites stiff, but not dry. Fold into above mixture. Miss Olcott told authorities she was travelling west when her German Shepherd dog jumped onto her shoulder. In pushing the dog away, her car crossed into the other lane.
