A spatter finish can be achieved by using a stiff bristle brushsuch as an old toothbrush. Dip the end of the brush into the paint and "spring" the bristles with your finger to throw a fine spray of toner over the undercoating. Around Naples, in Italy, good cooks like to sauce their pasta with a mixture of clam broth, butter, parsley, and tender clams. Here is a new version of clam sauce that uses a convenience base of condensed cream of celery soup, but retains the delicate, slightly garlic flavor of the Neapolitan classic. You'll find it easy to make with condensed soups. When you choose or create main dish recipes that start with a soup sauce, you know you are halfway home. Most of all the seasonings you need are contained in the soup. Next time you have a yen for spaghetti, take a vacation from the traditional tomatomeat sauce and spark family suppers or little dinners with this delightful hearty dish; Clam- Sauced Spaghetti. Garnish servings with bright cherry tomatoes or tomato wedges. On the side, serve a salad of orange slices and lettuce. Top with crumbled blue cheese . . . an interesting combination ... and creamy French dressing. For dessert, make easy chocolate mousse. Whip cup heavy cream; fold into canned Dutch chocolate pudding (chilled). Small servings are satisfying, so spoon into small dessert dishes or wine glasses. Refrigerate until serving time. Top with chopped toasted pecans; add dabs of whipped cream if you like. CLAM-SAUCED SPAGHETTI Vi cup chopped onion 1 large clove garlic, minced % teaspoon leaf thyme, crushed 2 tablespoons butter or margarine 1 can (10% ounces) condensed cream of celery soup 1 can (7 ounces) minced clams 2 tablespoons chopped parsley 2 cups cooked spaghetti (about 4 ounces uncooked) In saucepan, cook onion, garlic, and thyme in butter until onion is tender.
