This 40-year old school made creative cooks out of thousands of beginners, and countless others followed the Pope's TV program which emanated from Chicago five days a week for twelve consecutive years. In addition, their cookbook, revised in 1961, devoted to the pleasures and principles of fine cooking, is a time-honored item. Tips For The Homemaker One of the new looks in home kitchen equipment is the "smooth-top" range or cooking surface. What is it? It is a flat range top made of special glass ceramic. Since it is flat a main ad vantage is there are no grates, no bowls, no visible burners or elements. Therefore, no hard to reach areas and corners to clean. The entire rangetop surface is sealed into a counter space or in a free standing range. Thanks to this smooth sur face, many proud owners, according to Pat Sullivan, University of Illinois Extension Home Economist, feel they have additional work space. It is also thanks to the fact that there is little sideways transfer of heat. The heat is confined to the cooking area. Smooth surface rangetops are available in either two or four cooking area units. In order to conduct the heat more rapidly to the food being c o o k e d , m a n u f a c t u r e r s recommend smooth bottomed cooking utensils; and avoiding pans with rims on the bottom, pans with concave or convex bottoms, or warped pans. WEEKLY RECIPE This is a dish which is just right for a large crowd s i n c e t h i s r e c i p e y i e l d s about three quarts. I like to add whole toasted almonds and diced canned pineapple to dress it up. You need only a bowl of rice and perhaps chow mein noodles for ac companiments. Chop Suey '/2 c peanut oil 2 c s h r e d d e d c o o k e d chicken or pork 1 jar bead molasses 2 cans bean sprouts 2 cans water chestnuts 2 cans bamboo shoots 2 small cans sliced mushrooms 4 c diced celery 2 c onion, chopped soy sauce 4 T cornstarch Cook celery and onions in the oil until soft. Drain all cans of vegetables except mushrooms then add all veg etables, chicken or pork, and soy sauce. Add enough chicken stock to cover. Mix together 1/3 to 1/2 jar bead molasses, 4 T cornstarch, and a few drops of cold water. Mix until smooth then add to first mixture and stir. Let this simmer Vi hour. •This also freezes very well. Some people suspect their friends quicker than any one else and are ready, at all times, to accuse them of unkindness.
