ITEM: Only 50 to 60 percent of American households have diets which meet recommended nutri tion standards. Ironically, low in come is not the only reason for malnutrition in this country Much malnutrition results simply because food choices are deter mined by personal preferences or dislikes, and because people do not know what kinds of food they should eat to maintain good health. Green street, McHenry. Each year the members of the congregation elect ten members to the church council, or governing board of the church, who in turn direct and carry out the program of the church. In addition to the officers of the church, five standing committees are used to im plement the total witness and program of the church. The following members were elected to the council and committee positions: Erv Staveteig, president; Bernard Davidson, vice-president and worship committee co- chairman; Art Matthies, secretary and worship com mittee co-chairman; Robert Putman, treasurer; Gene Honning, property co- chairman; Robert Finkbeiner, property co-chairman; Mrs. Eugene Miller, evangelism chairman; Iver Johnson, ad visor to stewardship com mittee; Mike Benjamin, parish education co-chairman; Pearce Konold, parish education co-chairman. The group meets at least once a month to oversee the program for the 900-member parish. ITEM: Roast meat thermom eters were designed for use in cooking large cuts of meat by dry heat; for example, standing rib roast of beef, rib eye (Delmon ico), sirloin tip or rump, pork loin, leg of pork, leg of lamb, or Iamb rib roast The meat ther mometer is placed in the thickest part of the meat so the bulb is centered, resting neither in fat nor on the bone. MR. AND MRS. LEO REGNER WED 55 YEARS -- Mr. and Mrs. Leo Regner of Volo observed their fifty-fifth wedding anniversary last Sunday. Feb. 13, with dinner at the Timbers, Woodstock. Guests at the reception were Mr. Regner s two brothers, Frank of Ingleside and Jacob of Chicago. Mrs. Regner's sister, Kate Brown, of McHenry and two sisters-in- law, Mrs. Barbara Diedrich and Mrs. Elizabeth Diedrich. Volo Leo Regner and Clara Diedrich were married Feb. 14, 1917, in St. John the Baptist Catholic chuich, Johnsburg. They farmed in the Yolo-Lakemoor area before retiring fourteen years ago. Both are in good health. Don't worry if you forget to take that roast out of the freezer to thaw. Just remember that a large frozen roast needs one-half more cooking time than a fresh one of equal size. Patricia A. Sullivan, McHenry county home economics adviser, recom mends that you use a meat thermometer. Since it shows the temperature inside the piece of meat, it gives the most accurate measure of doneness. Inserting the thermometer into a piece of frozen meat is almost impossible unless you have a tool to make a hole in the meat first. Miss Sullivan suggests that you let the meat thaw a little in the oven before inserting the thermometer. Insert it so that the bulb is at the center of the thickest part of the meat and does not touch bone or fat. Because of the longer cooking time, it's a good idea to lower the oven temperature slightly for a frozen roast to prevent the outer part from drying. You may note that meat roasted from the frozen state usually seems a little drier than that roasted after thawing.
