And for extra praise, when you are making Quick Brazilian Beef, add a small amount of aromatic cumin. Quick Brazilian Beef 2 tablespoons flour 2 tablespoons corn starch %' teaspoon salt '/a teaspoon pepper 1% pound top round steak, 1 inch thick Corn oil for frying; 1 medium onion, sliced 1 (1-pound) can tomatoes 2 tablespoons chopped parsley 2 bay (or laurel) leaves Z2 teaspoon cumin 1 tablespoon water Mix together flour, corn starch, salt and pepper. Coat meat with mixture. Reserve remaining corn starch mixture. Pour corn oil into large skillet to depth of % inch. Heat over medium high heat 3 to 4 minutes. Add meat and cook, turning once, about 25 minutes or until meat has crisp crust on both sides and is medium rare. Remove meat. Drain off all but about 1 table­ spoon drippings from skillet. Return meat; add onion and saute 5 minutes. Stir in tomatoes, parsley, bay leaves and cumin. Stir together 1 tablespoon reserved corn starch mixture and the water; add.
