Eggs a*e high in protein and a good substitute for meat at any meal. They need a little dressing up, though, to be featured at din­ ner ! (Eggs Just happen to remind too many people of, breakfast.) While eggs are nu­ tritious and can be served as the entree, they don't seem to be as filling as meat. And that's whfef* rice comb in. When stir­ red into the egg mixture and baked, or when served as the base for an egg dish, rice adds the bulk and satisfaction so nec­ essary at mealtime. And to satisfy your budget, rice costs only 2 to 3 cents per half-cup serving! Egg prices vary from 8 to 10 cents each. A meal that starts with a half cup of rice and 2 eggs starts out with a base price of about 23 cents per serving. Add a few cents worth of chopped onion, less than a penny's worth of herb or spice, and less than a dime's amount of cheese and you have a dish that tastes good, is most nutritious, and really satisfies. Give it a fancy French name and your family will really be impressed! No need to mention that it didn't cost much to prepare. SUNNYSIDE RICE •/« cup chopped onion cup chopped green pepper 1 tablespoon butter or margarine 2 cups cooked rice Salt and pepper to taste 6 eggs 2 tablespoons grated Parmesan cheese Saute onion and green pepper in butter until tender but not brown. Add rice and season­ ings. Cook until hot Make 6 Indentations with back of a spoon. Break an egg into each indentation. Sprinkle with cheese Cover and cook until eggs are of desired doneness. When sliced for serving, the hard-cooked eggs in the center show up nicely. For lunch, top the slices with a tomato sauce and serve with a salad. Or serve instead of po­ tatoes for dinner. GOLDEN RICE LOAF cup unsifted flour V'4 teaspoons salt •/« teaspoon pepper '/»teaspoon dry mustard v« teaspoojo^sage 2"a cups 2 cups Cheddar 3 tablespoons/gr&ted onion 3 cups cooked rice 3 eggs, slightly beaten 3 hard-cooked eggs Combine flour, salt, pepper, mustard, sage and about »/»cup of the milk; stir until smooth. Stir in remaining milk. Cook until thickened, stirring fre­ quently. Add cheese and stir until cheese is melted. Remove from heat. Stir in onion, rice, and slightly beaten eggs. Line bottom of greased 8'/» x4 '/i inch loaf pkn with wax paper. Put about half of the rice-cheese mixture in bottom of pan. Ar­ range iiard-cooked eggs length­ wise in center. Cover with re­ maining rice-cheese mixture. Set in part of hot water. Bake at 350*" for about 1 hour or until set.'MLet stand in part about 5 minutes. Unmold. Slice to serve. Makes 6 to 8 servings. Here's a new and different way to make a meat loaf . . . layer seasoned ground beef with a savory rice mixture. Bake together. Then garnish with a vegetable and the whole mead can be served on one platfer . . . meat, rice, and vegetable. MEAT LOAF MEXICALI 3 cups cooked rice ife cup chopped green pepper •/4 cup finely chopped onion 3 tablespoons diced plmlentos 1 Vi pounds lean ground beef i/« pound bulk pork sausage 1 cup finely diced celery cup bread crumbs 1 egg, beaten lti cup tomato sauce 2 teaspoons garlic salt teaspoon pepper Combine rice, green pepper, onion, and pimientos; toss State Senator Jack SchafferL (R-Cary) urged the people of this district to carefully review the RTA compromise passed by the legislature last week in Springfield. He pointed out to become effective, t**. legislation will require district- wide approval by the people in the six-county area in the March primary election. Senator Schaffer pointed out that neither he nor any other representative of the 33rd district voted for the Walker compromise, and indicated that he felt that the 33rd district representatives in the legislature were correct in their vigorous opposition to the Walker RTA compromise. Schaffer sponsored or co- sponsored numerous amend­ ments to the RTA package, all of which were summarily rejected, many without debate lightly; set aside. Mix together remaining ingredients. Into a 2-quart mold, spoon half the rice mixture. Layer with half the meat mixture, pressing firm-, ly into the mold. Repeat with another layer of rice and meat. Bake at 400° for 45 minutes, or until done. Drain off excess meat juices. Allow to stand 10 minutes. Invert onto serving platter. Garnish with whole cooked carrots, if desired. Some of the amendments rejected would have provided for: (l) A two-part referendum separating the suburban area from Chicago, and requiring that the RTA referendum must carry in both areas. (2) a proposal to provide . more representation on the RTA board from the outlying counties; (3) a proposal to provide a special referendum for Kane, McHenry and Will counties to be removed from the provisions of RTA; (4) a proposal to/eliminate the rural townships in Kane and McHenry counties from in­ clusion in the RTA for the next twenty years; (5) a proposal to prevent RTA bond holders from windfall profits; (6) a proposal to prevent the RTA from im­ posing a parking tax on private property; (7) a proposal to alert the voters that the creation of an RTA also creates new taxes and large bonded indebtedness; (8) a proposal to prevent the use of the RTA as a patronage operation by in­ serting the provisions of the Federal Hatch act; (9) a proposal that would delete the local gasoline tax in favor of a straight state subsidy. The legislation does not in­ clude any guarantee of ex­ panded mass transit service in Kane and McHenry counties, but does include a 5 percent tax on gasoline. Senator Schaffer explained he hopes the voters in Kane and McHenry counties would conscientiously study the RTA Walker proposal before voting in the March primary election. He also indicated a willingness to speak before any civic group to explain the RTA proposal as objectively as he could. The annual SRA high school placement test at Marian Central Catholic high school drew tremendous response from all areas of McHenry county as 222 eighth grade students wrote the test battery Sunday. Dec. 9, at the school. The test was administered both morning and afternoon in three-hour sections by Marian's Guidance Depart­ ment. The 222 eighth graders represent the highest number ever taking the placement test for admission to the county- wide Catholic high school. The test is used by the Guidance department and faculty as an aid in scheduling freshmen for classes when they register for the fall term Feb. 10. All fourteen parishes in McHenry county were represented by students taking the test as well as twenty-five junior high schools. The number taking the test reflects a 47 percent increase over the number writing the 1972 test. Important dates for parents of eighth graders to remember are: Jan. 11, eighth grade Activity night; Jan. 13, SRA High School placement test (make-up); Feb. 10, freshmen registration.
