Tips For Homemaker PAGE 3 • PLAINDEALER-FRIDAY, OCTOBER It, 1«N FREEZING Since today's meat supply is plentiful and the price is lower than this month last year, now is a good time to purchase meat for your family. Most meats can be frozen satisfactorily if properly handled for later use, thereby saving money in your food budget. Also, when meat prices increase later in the year, you will be able to better feed your family more nutritiously with the meat you buy this week How long can you keep meats in your freezer? The time varies with the type of the meat Beef (roasts, steaks, etc.) 6 to 12 ijionths; veal 6 to 9 months; pork 3 to 6 months; ground beef, veal 3 to 4 months, and ground pork 1 to 3 months. These time periods are recommended only for meats stored at () degrees F or lower Higher temperatures and fluctuations above that tem perature impair quality. Chilly, fall days are a perfect time for beef vegetable soup, stews, chowders, etc. If a family doesn't happen to have enough members to consume a gallon or so of these tasty dishes, we often choose not to make them as they are best when made in quantity and simmered for awhile. Stews and similar meat dishes will freeze well in air - tight con tainers for 3 to 4 months. Homemakers are often surprised at the amount of meat they can store in the freezer compartment of their refrigerators even if they don't have large freezers. By trimming off excess fat and removing bones, you can conserve freezer space, too. Points to remember in freezing fresh meats: 1) Freeze fresh meats while in their top condition. 2) Use proper wrapping materials. Wrappings must be air tight, whether they be transparent moisture - vapor - proof wraps, or plastic bags. Write name and cut of meat, and the date placed in the freezer on the outside of the package. This helps to indicate the number of servings and the order of use. 6) Freeze quickly. Initial freezing should take place at -10 degrees F. 7) Maintain 0 degrees F. or lower during freezer storage. 8) Refer to times listed above for maximum storage times. Frozen meats will be at their best quality if used within those time periods. 9) Do not refreeze defrosted meat unless an emergency. There is loss of juices during defrosting and the possibility of deterioration of the meat between the time of defrosting and refreezing.
