When cooking venison, follow the same procedures as beef says Pat Frank, McHenry county Extension adviser in Home Economics. The first shotgun deer season was Nov. 15 to 17. The second shotgun season in thi^area is Dec. 13 to 15 from 6:30Vm. to 4 p.m. with a limit of on^. deer per year. ThA off-flavor of venison concentrates in the fat. Trimin/ing away the excess fat will help to remove the strong off-flavor of the venison. When butchered, venison is cut similar to beef. The hind and the foreshank meat make good soup, stews, and ground meat for deerburgers or meat loaf. Beef suet can be added to the deerburgers during the grinding. The usually tender round may be used for s teaks or roasts . Because the meat of older animals is less tender, use it for Swiss steak. As with beef, the loin produces choice roasts or steaks. While (he rump of a young buck may be roasted, the average deer should be used as pot roast and stew When roasting venison, just as with other game, add fat . Slices of sal t pork or bacon are placed around or over the meat, ("ut s l ices or pierce the meat with a long skewer and push str ips of fat into the cuts. If sal t pork is used, chil l the fat so it wil l be f irm for sl icing. The steaks and chops should be broiled or sauteed quickly and served tare If the steaks fc* r±on / (Ofitomztiiit) ANNOUNCES THAT HE HAS ASSUMED THE OPTOMETRIC PRACTICE OF (Qfitomzbuit) ALL PAST RECORDS AND HISTORIES REMAIN AVAILABLE | BY APPOINTMENT ONLY ' 4719 W. County Ladies Attend First Farm Wife Forum Interspersed among programs on decorating, kit- chenware and communications were others on estate planning, computerized records and farm marketing forecasts. Speakers talked on consumer-farmer relationship and Singer Anita Bryant thrilled 2,000 women in what has proven to be a suc cessful first National Farm Wife forum, sponsored by the four-year-old Farm Wife magazine. McHenry County Farm Bureau had good participation at the three-day event in Milwaukee's beautiful new convention center. Mrs. Joanne Cornelison, chairman of the McHenry County Farm Bureau Women's committee, headed the local group. In one of the featured talks, John Byington, deputy director in the office of consumer affairs in the Ford administration, said, "The Administration considers outdated government policies to be one of the greatest impediments to the fight against inflation." He said competition in the food industry is an economic fact of life, producing a more efficient market for farmers while bringing consumers more quality at a lower price. "But is competition becoming an orphan of a complicated, concentrated food production system?" he asked. He said the Federal Trade commission believes it deserves a major government investigation, noting the FTC hrs found that of the 32,500 food manufacturing firms in 1966, the largest 100 took 71 percent of the profits. The FTC is interested in the extent to which food processing and manufacturing companies have become integrated into the production sector or have strong contractural relation ships with producers. Talking about rising prices, Byington said the rise in sugar prices is an example. Rising affluence and rising population around the world helped in crease sugar consumption at a rate outpacing production increase. "More buyers are in the international market bidding against each other for sugar at a time when it is in the shortest supply in years. "When sugar costs go up, costs go up for every product that contains sugar -- candy bars, soda, processed fruits and fruit drinks, bakery products - for example." Focusing attention on the World Food conference at Rome, Byington said the Ad ministration is "Deeply con cerned about the world-wide tragedy of widespread hunger and starvation and will do what it can for these people. In the months ahead, I nope farmers and consumers will lend sup port in this humanitarian gesture. "Even though we face serious problems here at home, we must look beyond our borders and help our neighbors. We are citizens of the world." Grandma W<^ who're ol' -fashioned, remember th' time, when smokin' in school, 'r on th' grounds, brought th' principal down on th' heads o' th' of fenders, resultin' in bein' ex pelled, fer repeated offenses. Seems t' this granny that undisciplined b'havior 's th' root o' the' problem, an' it 'ppears that rules an' regulations 're made t' fit th' adult offenders. Reservin' a special area f'r smokers, en courages th' offensive habit, an' only serves t' appease th' addicts. Th' habit has been perpetrated on th' public, in order t' fill th' coffers o' th' manufacturer o' th' "Pill," that little white cylinder, filled wi' t'bacci, which folks recognized long, long ago, as detrimentaf t' health. "Coffin" nails" they wuz called, too, an' th' fellers that used 'em wuz pitied. But, th' sheep fell f'r th' racket, an' spent hard-earned money t- satisfy th' filthy habit. It and chops are from old animals, they should be marinated, recommends Ms. Frank M.I MM BREAKFAST The class of 1974 of McHenry Community high school is extended a special invitation to attend an alumni breakfast in the West campus cafeteria Friday, Dec. 20, at 8:30 a.m. Sponsor of the annual event is the Guidance department. amazes me, right smart, that some o' me dear ones, fell inter th' trap, an' encouraged by folks, who professed t' be friends, they've become a prisoner o' th', weed. That's what it wuz called b'fore th' latest weed addiction, marijauna, an' it gits ye jist as strong an' it jist might be more harmful, 'cause th' damage it does, 's so gradual an' per sistent, it's like water a wearin' away a stone, ye can't tell that th' damage's done, 'till it's too late. It breaks this granny's heart t' see folks I love, indulge in th' destructive habit. Seems like they git indoctrinated wi' th' poison, an' can't get along wi'out th' cigaret. Sometimes, this granny wonders if they really want t' make life un bearable fer their loved ones, an' their own lives miserable, in th' years that should be th' golden ones. No one c'n be so smart, as t' know whether 'r not they'H be one who excapes wi'out payin' th' piper But th' number o' folks who don't escape, far out number th' ones who do. Our bodies 're God-giv'n, th' flesh an' blood miracle, t' house th' brain, an' th' soul, f'r time on this good earth. Can't folks realize that they risk all that's good, in life, fer th' love of' that little white paper, holdin' th' fragrant leaf that c'n make life a living' hell?
