Tips For | The { Homemakcr 5iiiiiiiiiimiiiiiiiiiiiiiiiiiiiiiiiiiiiitiiiiii? The U.S. Department ol Agriculture (USDA) and Fooc and Drug Administration (FDA) question the home canning recommendations made in an article in the June issue of Consumer Reports magazine, reports tNancy Moore, University of Illinois Extension home economist. Consumers are advised in the article to increase pressure and reduce cooking time when canning foods at home. The USDA and FDA both recommend that until the Consumer Reports' recom mendations are "scientifically determined to be adequate to assure destruction of microorganisms," consumers who can at home should con tinue to rely on the standard pressure and cooking times previously recommended. Time and cooking pressure are important because bacteria which cause food poisoning, such as botulism, can develop in improperly processed foods, explains Mrs. Moore. Most cases of food poisoning in the United States, including botulism, are traced to im properly home-canned foods. USDA has available publications on the home canning of fruits, vegetables, pickles, relishes, meat and poultry. The times and tem peratures recommended in these publications have been scientifically tested in laboratories and have proven to be safe and effective. The McHenry County Cooperative Extension Service office has available copies of the following USDA canning publications: --HG-8, Home Canning of Fruits and Vegetables, -HG-92, Making Pickles and Relishes at Home, and -HG-106, Home Canning of Meat and Poultry. Information is available at the University of Illinois Ex tension office, McConnel road, or call 338-4747 or 338-3737, between 8 a.m. and 4:30 p.m. Monday through Friday. Services are available to all McHenry county residents. Chicago Loop Trip Planned For Senior Citizens Following the opening of the June 21 meeting, members of the Wonder Lake Senior Citizens club were reminded that those who signed for the bus trip to the Chicago loop should meet at the Nativity lower parking lot for 8:45 a.m. boarding time. Arrival at the loop is expected to be about 10 a.m. and the return to McHenry about 3 p.m. With the fourth of July Bicentennial celebration at Wonder Lake approaching it was suggested that a representative of the Senior Citizens club be a part of the parade. Secretary Peg Thome and Gladys Dolce reported on the progress of the blood pressure program. Miss Behan from McHenry hospital instructed the class on using the in strument for taking the blood pressure. It is hoped to begin taking blood pressure once a month in the near future for residents of Wonder lake.
