Ginger Apple Cake one 13 x 9-inch cake Vh 2 Vh 1 1 V4 V4 '/i cups enriched flour* teaspoons baking powder teaspoons ground ginger teaspoon baking soda teaspoon salt teaspoon cinnamon cup shortening cup sugar V4 cup brown sugar 2 eggs V4 cup chopped crystallized ginger V4 cup milk l'A cups finely chopped peeled apple V4 cup chopped walnuts, optional Ginger Cream Frosting Stir together flour, baking powder, ginger, soda, salt and cinnamon. Cream shortening and sugars until light and fluffy. Beat in eggs, one at a time. Blend in crystallized ginger. Thor­ oughly blend flour mixture into creamed mixture alternately with milk, beginning and ending with flour. Stir in apple and nuts. Spread batter in greased 13 x 9-inch baking pan. Bake in preheated 350° oven for 40 to 45 minutes, or until cake tests done. Frost cooled cake with Ginger Cream Frosting. Ginger Cream Frosting 1 package (8 oz.) cream Vi cup chopped cheese, softened crystallized ginger 3 tablespoons honey V* cup chopped walnuts Beat together cream cheese and honey until smooth and fluffy. Stir in ginger and nuts. •Spoon flour into dry measuring cup; level. Do not scoop. Surveys conducted in New Jersey and Riverside, Calif., among motorists whose cars are inspected for emissions show popu­ larity for the pollution- reducing,. gas saving checks. When motorists in New Jersey, the only state with compulsory emissions inspection and compliance statewide, were queried about their experiences, the rate of unfavorable responses was low. According to one New Jersey environmental pro­ tection spokesman, "We sent out questionnaires to 23,000 persons who had their cars inspected. Only two and a half per cent had unfavorable com­ ments about the inspec­ tion. While 92 per cent made no comment either way, five percent went out of their way to praise inspection." Of those who had to have cars repaired because they failed emission tests, the majority paid less than $25 for the correc­ tional work, the survey showed. New Jersey clean air officials estimate an annual $80 saving on fuel when the car is properly tuned. The Riverside inspection program enjoys a 92 per cent approval rate from motorists surveyed. Seven per cent rated the inspec­ tion program as "fair" and only one per cent said it was "poor." The tests, which are voluntary and performed at no charge, result from an experimen­ tal pilot program man­ dated by the California state legislature. Of the 30 per cent of the cars that failed to meet standards, one-third of the motorists repaired their cars for a retest. Average repair cost has been $18 to $28.
