CHAIRMAN AND HAROLD FREESE, TREASURER 4404 EAST DRIVE, CRYSTAL LAKE. ILLINOIS --- -- "Open Dating" In Supermarket Yams Dressed For Spring PACK :$ - I'LAINDEALER-WEDNESDAY, MARCH 30, 1977 EDWARD HUGHES Trustee What is open dating? If you think "open dating" refers to modern courtship practices, you may want to pay closer attention to what's happening in your super market. According to Nancy Moore, University of Illinois Senior Extension adviser in McHenry county, open dating means calendar dating packaged foods to indicate freshness. To be "open" it must be easily read and understood by shoppers. Open dating should help consumers with their buying decisions and eliminate codes on perishable foods that are meaningless to consumers. Currently, members of the food industry participate voluntarily in open dating, explains Mrs. Moore. This has led to misunderstanding by consumers and the existence of four markings used to indicate open dating: --"Packed On:" The date of manufacturing, processing or final packaging. --"Sell By or Pull Date." The last day a retail store may offer the iood for sale. This date, however, leaves time for the cosumer to use the product at home, even if bought on the sell date. --"Use By:" The quality assurance date which refers to the peak quality of the food product. -"Exp:" The expiration date marking the end of the product's useful life or the last day it should be used. Exp. is sometimes used in terchangeably with the pull date. A recent survey by the U.S. Department of Agriculture found that although over 90 percent of consumers said open dates on food are helpful, less than 75 percent could correctly interpret three of the four kinds of dating being used. This confusion has led to a proposed amendment to the Food, Drug and Cosmetic act and the Fair Packaging and Labeling act. Part of this proposed federal legislation would require "Pull Dates" and storage instructions for the consumer on all perishable FRANK J. HELEN MILONE MARILYN JANKE REZABEK, JR. Although we used to think of yams only at Thanksgiving and Other winter holiday meals, this versatile vegetable is now making appearances on menus the year round. And people are discovering that yam side dishes are a great flavor companion to ham and other roasted meats. * Now, when you're planning your Easter and other spring holiday dinners, is a good time to try Orange Mallow Yam Bake. This new recipe was developed by the Home Economists in the Kraft Kitchens especially to feature the natural flavors we seem to crave with the advent of spring. Fresh orange slices contribute a citrus contrast to the canned yams. And toasted miniature marshmallows top off the casserole with just the right amount of sweetness and an at tractive finish. Besides being delicious, Orange Mallow Yam Bake is so easy (it takes only minutes to make it oven-ready), you'll want to fix it often. Orange Mallow Yam Bake 2 17-oz. cans yams, % cup brown sugar, drained "" packed 2 oranges, peeled, sliced, 1 Vi cups Kraft miniature cut in half marshmallows Arrange yams and orange slices in a 1-1/2 quart shallow baking dish. Sprinkle with brown sugar. Bake at 350°, 20 to 26 minutes. Sprinkle with marshmallows. Broil until lightly browned. 6 to 8 servings CKETE Europe's oldest civilization is believecf to have been the one^ on the Greek island of Crete. LEROY GESKE Rood Commissioner
