MEG HUMANN LEE STEINSDOERFER CROWN ASPIRANTS--Hopeful seekers of the king and queen crowns to be bestowed Prom night, Saturday, April 30, include four McHenry West campus seniors. Among them is Meg Humann, daughter of Mr. and Mrs. Donald Humann of McHenry. Meg's school activities include band, pom pom girl and bat girl. She lists hobbies as reading and fishing with a special interest in music. She plans to attend Nothern Illinois university, majoring in history and music. Lee Steinsdoerfer shares a love of music and expresses it with guitar and piano, arranging and writing. His future plans JOAN LINGEMAN SCOTT LETZTER include college in the fall. He is the son of Mr. and Mrs. Andrew Steinsdoerfer of McHenry. Joan Lingeman, the daughter of Dr. and Jerry Lingeman of Johnsburg, will be studying management at Purdue university in the fall. School activities included membership in the student council, pom pom squad, and the National Honor society. All sports claim the interest of Scott Letzter and school participation took in baseball, IBA and M club. He plans to pursue a career in data processing. It probably was a native to the eastern Mediterranean lands and Asia Minor where it still grows wild. Thomas Jefferson grew asparagus in his greenhouses at Monticello. Not all asparagus is green. In some areas blanched or white varieties, which are somewhat milder, are popular. Asparagus is good hot, cold, lukewarm, pickled, in sauces, aspics, or with salad dressing. Asparagus has a tender stalk that punctures easily. The best quality tips should be tightly closed. Spreading tips indicate over-maturity. This vegetable is sold mainly by weight in tied bunches, usually 2's pounds. One pound is equal to 16-20 stalks. In storing asparagus, do not wash before storage. Cook as soon as possible. Fresh asparagus will keep four days in the refrigerator. Frozen asparagus will keep one year in the freezer. The food value obtained is good for Vitamin A, fair for Vitamin B and C and iron. Dieters will like its 3'^ oz. at 21 calories served without benefit of sauce, butter, etc. The asparagus season is nearing its peak. So now is the time to freeze this tender spring delicacy for your family's enjoyment all year. The commercial season for asparagus starts in February and reaches its peak in May. Sort ac­ cording to the thickness of the stalk. -Wash thoroughly and then cut or break off the tough ends of the stalks. Discard these. Leave spears the length of the package they'll be frozen in or cut in two-inch lengths. -Blanche, or heat in boiling water (at least one gallon water per pound asparagus,) following this timetable: Thin stalks-two minutes; Medium stalks-three minutes; Thick stalks-four minutes. Cool immediately in cold water. Drain. -Pack into containers leaving no head space. When packing spears, alternate tips and stem ends. -Seal and freeze. One crate, or twelve two- pound bunches, will yield fif­ teen to twenty-two pints frozen asparagus. A 1 to 14 pound bunch will yield one pint, Mrs. Moore concludes.
