The U.S. Department of Agriculture (USDA) reports a better than average peach crop of good quality. Smart shoppers take ad­ vantage of seasonal produce when it is in good supply and at reasonable prices. Incidental knowledge in handling peaches can be valuable at a plentiful season such as this, for you will probably buy them frequently and eat them regularly. Don't judge a peach by its blush. The red color is not always a good indicator of the ripeness. Look at the background color. It should be creamy to a very mellow yellow color. Also, look it over for well-defined creases. Fragrance can also be an in­ dicator of ripeness. Any green color on the peach indicates it might Jiave been picked before it was fully mature and may be difficult to ripen as a result. Unbruised but fully-ripe peaches will keep a week in the coolest part of your refrigerator, so don't restrict yourself to buying just enough for a few day's use. When selecting peaches from the store display, handle them carefully. They can be bruised fatally by squeezing or rough handling. . Heat together the egg yolks and honey and add the egg whites. Heat the milk and quickly beat into the mixture. Put the bowl in another bowl of hot water and continue to beat until the cream thickens. Do not cook. Pour the cream over the peaches and decorate with almonds or cherries. PEACH AND BANANA CREAM PIE 1 9-inch baked pie shell >/4 cup sugar 1 package vanilla pudding and pie mix V/2 cups milk 2 peeled, sliced fresh peaches 1 sliced banana whipped cream topping / Blend sugar, pudding and pie-filling mix and milk. Cook over medium heat, stirring constantly, until mixture thickens. Cool slightly. Fold sliced fruit into filling. Pour into baked pie shell. Chill and serve with whipped cream.
