Investigate Exotic Garden Species Before Planting Mary, Mary, quite contrary, planned her garden with silver bells and cockle shells. What are you planning? How about some celeriac, chayote, da sheen or martynia? Sound exotic and exciting? Sure it does. But what are you going to do with them after they are planted and grown? In the summer as plants start to mature, the Extension office gets all kinds of questions: like "how can I tell when to pick it" or "how do I cook it?" or "how do I preserve it?" By harvest time, it is probably too late for the questions. The time to ask questions about exotic or new varieties of garden produce is now. Plan your garden according to soil type, size, what your family likes and enjoys. You must also ask how much you want to harvest to eat fresh and to preserve. If you'd like to try planting an exotic vegetable, contact the seed company and ask them for suggestions as to eating and preserving. Seed companies are always coming up with something new or reviewing older varieties. To avoid waste of time, energy and produce you should know the end result before you plant. To shed a little light on the plants mentioned before, celeriac is like celery, carrots, parsely, parsnips and dill all rolled into one. It is a member of the parsley family and grows to about 36 inches high. The celeriac bulbs may be boiled like potatoes and used as such (but need to be cooked longer than potatoes). It may also be grated raw as a salad topping. Chayote may be called a "vegetable pea" because it's a light green and pear shaped fruit that is served with salad MARCH 14 Town And Country Newcomers Club-Monthly Meeting-7:30 p.m.-St. Paul's Episcopal Church, McHenry.
